Rustic Pear & Blueberry Galette

Rustic Pear Galette with Blueberries looks so elegant, your guests will think you’ve spent hours slaving in the kitchen!  Well you can always dust a little flour on your nose, just for effect you know?  I will share this amazing recipe with you, including a link to an amazing pie crust video (now don’t be scared) making pie crust is dead easy.  Then all you have to do is slice up some pears, toss in the a bowl with sugar and spices and voila! Your very own Rustic Pear Galette with Blueberries.  It’s a showstopper, I promise.

You will need: recipe for a one crust pie (see video below) all purpose flour, butter, salt, bosc pears, walnuts, frozen blueberries, brown sugar, cornstarch, nutmeg, ginger & one egg. Caramel sauce, and white sugar for garnish.

This yummy combination of sweets will make your taste buds sing!  And it’s so easy to put together, the only waiting time is while it bakes.  The first time I made this galette I used frozen puff pastry.  But it just doesn’t have the right texture for me.  We want buttery, flaky pie crust, just like Mom and Grandma used to make.  Am I right?

And the beauty of making a Galette rather than a traditional pie, is that you just fold over the edges, pinch them together with your fingers, and cook the whole thing on parchment paper on a cookie sheet.  No fussing about getting the pie dough centred on the plate, fluting the edges — nothing like that at all.  It really a rustic tart, and once you’ve made this recipe, you will be ready to experiment with different fillings.  I love to make Apple Galettes, and Cherry too!  Whatever your imagine brings to the table.  That’s my gift to bakers everywhere.  Baking is totally creative and very left brain so the sky’s the limit!

A galette is a free formed pie, so to speak, and originates in France, hence the name.  In addition to dessert galettes, savory types are very popular too, and usually include lots of delicious cheese, vegetables and often meat.  Like a free-formed quiche perhaps?  And instead of using a pie plate, it bakes on a cookie sheet.  Easy as Pie!

For this recipe I used Bosc pears, blueberries, chopped walnuts, and brown sugar….well the recipe is below.  And my secret sauce?  I love to pour warm caramel sauce over the galette just as I serve it.  The recipe for the caramel sauce is here.

The baking time and temps are for a regular household oven.  Be sure to check your oven from time to time to make sure it is calibrated.  You can read about the importance of oven temperatures and times here in my How to Make Perfect Flaky Pie Crust.

 

TIPS TO MAKE A PERFECT PEAR GALETTE

  • Preheat the oven to 400F (or whatever temp the puff pastry instructions include)
  • Using a pastry mat, roll your dough to a 14″ circle and be sure it’s not too thin
  • Mix the brown sugar, cornstarch, nutmeg and ginger together
  • Follow the instructions carefully.
  • Toss the pears and walnuts in the sugar mixture until well coated
  • Arrange the pear slices in a circle – layering them evenly
  • Leave about 2″ edge all around your pie crust so that it will fold over and support the fruit
  • Place the frozen blueberries here and there over the pears to space them out
  • Fold over the pie crust as shown in the photos, the more uneven it looks, the better!
  • Brush the puff pastry with the beaten egg
  • Place in the bottom third of the oven and bake for 40 minutes or until the pie crust is golden
  • Remove and let cool for a few minutes before you move it onto a rack

The flavors of the Bosc Pears mixes with the tartness of the blueberries.  The brown sugar and spices covering everything make your mouth very happy indeed.  And all of that goodness nestled in a buttery, flaky, melt in your mouth, pie crust.  Galettes are so amazing to make, and like I said earlier, not only will you impress your family and friends, you will make this decadent dessert over and over.  Can’t you just see it on your dining room table, with lighted candles, and china, just waiting to be served?  Or maybe on the kitchen island, with the kids jumping up and down, waiting for a slice.

Ingredients
  • 1 pie crust 12"
  • 2 bosc pears peeled and sliced thinly

BEST INSTANT POT RECIPES BACKSTORY

The Instant Pot has been around a couple of years now, and is dropping in price all the time, so it’s now like buying a crock pot or really good toaster oven.  Instant Pots are helping busy working moms all over the world by giving them back more time.  I know all too well how precious that extra time is. And quite frankly, I don’t know how you do it with all of the challenges you have with your lives today.  It was so different when I was working full time and having to feed my family.

For many years I worked as a secretary to a busy law firm.  The work was interesting but after long days of being on the phone with cranky clients, and pounding the typewriter I was exhausted.  Yet I was responsible for getting a hot nourishing meal on the table for my family.  The gals I worked with had many creative ideas on how to do this and they were happy to share!  I didn’t get married until I was 31, and I gained an instant family, when my first husband brought two daughters to our marriage.

So what did I use?  Well a favourite method was to get a roast dinner ready, meat potatoes, onions and carrots – put it in the roasting pan in the oven, and set the oven timer.  When I arrived home eight hours later, dinner would be cooked, and it was pretty good!  Except when the timer didn’t work and the food was raw. 🙂

My other go to at that time was the crock pot or slow cooker.  I often purchased small roasting chickens when they were on sale, and stuck one in a crock pot frozen – and of course when I got home, we had roast chicken!   So I totally understand the pressures of needing help with meal planning.  That’s why I think you’ll enjoy this Best Instant Pot Recipes roundup.

HOW DO YOU MAKE A TRADITIONAL TOURTIERE?

Now I typically make the delicious beef and pork filling in my cast iron pan.  And I’ve always had to be really careful with this, because as I’m sure you know you can overcook meat if the heat is too high and it will dry out.

HOW TO MAKE TOURTIERE IN AN INSTANT POT?

So this past week I decided to try to make this awesome tourtiere recipe in my Instant Pot pressure cooker!  And you won’t believe not only how easy it is, but how delicious and moist the result was!  I also used a frozen ready made pie crust, because I was entering a contest by Tenderflake.   I didn’t win a prize, but I think we’re the winners with this amazing recipe!

So this post has been added to.  You can make tourtiere with the classic recipe or use the alternate instructions to make the filling in the instant pot.

Our Tourtiere is all dressed up with a maple leaf pie crust topping!

 

Well traditionally a French-Canadian dish, an authentic tourtiere recipe is often served during the Holidays, like Thanksgiving, Christmas, or New Years, but I like to have a few of these hearty meat pies in the freezer for those days you just don’t have time to cook.

 

FRENCH-CANADIAN TOURTIERE BACKSTORY

Now I know the main focus of this blog is easy family recipes, but I also have a passion for golden, flaky pie crust.  And this traditional tourtiere recipe really delivers!

In my family, Christmas Eve was a time that we got together before the big day!  We would go to Church, for a candlelight carol service and then come home and open up one present.  Usually that present was PJ’s or a book, and we would head off to bed early in anticipation of what Santa would leave us under the tree!

As an adult, that story changed slightly, to include delicious eats that we could enjoy after church!   This recipe was perfect, because I could make it ahead of time and freeze it, taking it out earlier that day and wrapping it up so that it would travel safely to my Mom and Dad’s.  I would put it in the oven on a low setting while we went to church, and coming home to those delicious aromas in her kitchen, well, those are things you never forget.

And while this amazing traditional tourtiere wasn’t served every year in our home, I am confident that it was enjoyed by many!  Today this recipe is one of my top 10 so I know you guys are making lots of Tourtiere!

Have a slice of this yummy Tourtiere won’t you? It’s a meal unto itself, and all you really need to add is a side salad.

We even have them after a long afternoon on the golf course!  This is one meat pie recipe you will want to serve anytime, not just during the Holidays.  The blending of different meats, herbs and spices in this authentic tourtiere recipe will have your mouth watering long before the pie is ready to serve.  But be patient!  The pie crust  and delicious filling in this recipe is worth the wait.

What is in a Tourtière?  Well in addition to deliciously lean cuts of beef and pork, that are slowly simmered, I think the unique combination of Tourtiere spices that includes cinnamon, cloves, nutmeg and summer savoury, provide an earthy, rich flavour.

Or in the case of the Instant Pot Recipe just below, you can speed up the process even more by using a prepared frozen pie crust.  Honestly?  I prefer my own pie crust.  But when pressed for time, or for no reason at all, I will use ready made pie crusts.  The quality is so much better today than it was even five years ago!

TIPS FOR A PERFECT FRENCH CANADIAN TOURTIERE IN THE INSTANT POT

I really didn’t change anything for the recipe ingredients at all, not even the water.  The filling still has to bake in the oven for 35 TO 45 minutes.

  • Use prepared frozen pie shells for the Instant Pot version of this recipe
  • Thaw the pie shells in the refrigerator while the tourtiere filling is cooking
  • Follow all the directions carefully
  • Don’t worry if the filling appears to have alot of liquid.  Some of it will bake away
  • Use pie crust cutters  (links below) to create a lovely design on your top crust or if using a solid top crust, be sure to cut several vent holes to let out the steam
  • Let the Tourtière stand for about 10 minutes before serving
  • Bon Appetit!

Whether you cook the filling on the stove top or use the Instant Pot, this traditional tourtiere recipe can be made ahead in a batch and frozen, either in the large 9.5” family size, or in an individual 4” size.

Pop the frozen Tourtière into the oven for 30-35 minutes, add a salad and presto!  A meal in minutes. Alternatively, bake the pie in a microwavable dish, and dinner can be ready quicker than that!

An easy recipe, and perfect for beginner pie bakers.  This Tourtière recipe is based upon the Mme Jehane Benoit Tourtière recipe, so I hope you enjoy it!

Not sure what to serve with a Tourtière?  Shown here with a tart tomato antipasto – mainly because I wanted something red!   But you can use your imagination and add any type of side dish.  The Tourtiere is a meal unto itself, so I tend to choose lighter sides, like a tossed salad, or grilled root vegetables.

A traditional French-Canadian dish, Tourtière, or meat pie is usually served around the festive season. It's such a hearty meal and easy to make in batches, so batch bake several and put them in the freezer. You can pull one out and pop it in the oven one night when you are pressed for time. Just add a salad! We have an Instant Pot Tourtiere and a Stove Top Tourtiere - take your pick!

Ingredients
  • 2 pie crust recipe uses lard, makes top and bottom crust
  • 2 lb. ground beef lean
  • 1 ½ lb. ground pork lean
  • 2 onions large, cooking
  • 1 cup celery chopped
  • 1 cup parsley chopped
  • 1 ½ c water filtered
  • 3 tsp summer savory dried
  • 1 tsp cinnamon ground
  • ¼ tsp nutmeg
  • Salt and pepper
  • 2/3 cup rolled oats large flake
  • 1 egg yolk large
  • 3 tsp. milk
  • 1 tsp cloves ground

Instructions for Stove Top
  1. In a large saucepan with a heavy bottom, (at least 3 quarts/litres) cook, beef, pork, chopped onion, celery, parsley, water, and all of the spices and herbs – on medium heat, until the mixture comes to a boil and the meat is broken down and looks crumbly – this will take 15-20 minutes (the meat should not be pink).  Then let the mixture simmer on low heat until the liquid is cooked down– this will take 50 – 60 minutes TIP: keep checking to make sure your burner isn’t set to high and overcooks the mixture, you don't want the meat to dry out! 

  2. Once cooked, stir in the oats and set aside to cool.  If you didn’t have time to make your pastry you can cover the mixture and put it in the refrigerator for 2-3 days.
  3. Put half of the meat mixture into one pie shell.  Roll out the top crust and with the edges moistened (see 5 Steps to Perfect Pie Crust!) flute the two crusts together with your fingers.  Brush the crust with a mixture of the milk and egg yolk (this will give the crust a golden glow) Cut vents in the top crust to allow steam to escape.  Repeat for the second pie.

  4. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden.  Let the pie stand for 5-10 minutes before serving.  It will be piping hot!  Each pie will serve 6 to 8 people.
  5. To freeze your authentic tourtiere recipe:  double wrap in aluminum foil and then place inside a zippered freezer bag to prevent freezer burn.

Instructions for Instant Pot
  1. Get your frozen pie shells out of the freezer and let them thaw before baking

  2. In the bottom of your instant pot, place all of the ingredients: onion and celery, beef, pork, parsley, water, and all of the spices and herbs

  3. Mix the ingredients up - make sure the meats are broken down as much as possible

  4. Put the lid on your Instant Pot and set the timer to Meat/Stew for 20 minutes on High.

  5. Do a slow release for 5-7 minutes, then a fast release for the rest of the pressure.  Remove the lid and let stand for about 10 minutes.  You want to do this because the filling will be piping hot and it makes it easier to put into the pie shell

  6. Prick the bottom of the pie shells with a fork and put half of the filling in each pie shell and spread evenly.  

  7. With the two remaining pie shells, gently remove them from the pans, and roll them out on your baking mat.

  8. Using the pie crust cutters, create fun designs to cover the tourtiere mixture. OR you put the entire crust on the top, crimp the edges using your fingers.  MAKE SURE you cut a hole in the top crust for steam to escape.  

  9. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden. Let the pie stand for 5-10 minutes before serving. It will be piping hot! Each pie will serve 6 to 8 people.

I love using my slow cooker – soups, stews, pulled pork, potatoes, chili, roast beef, chicken….. well I’m sure you do too.  Why?  Because it saves me TIME.  What’s the one thing that people say on a Monday morning when you ask “how was your weekend?”  Always, always – “it was too short!” So in addition to finding ways to make delicious pies and pastry – I’m searching for easy and quick recipes for you to make delicious desserts.

S’mores Crockpot Chocolate Lava Cake all set for two!

On long weekends I often make an amazing BBQ Pulled Pork.  So following on that success, I’ve been researching recipes and wondering what other wonderful things I could use my crock pot for?  I got my answer earlier this week from hubby Mark, who advised me that when he returned home to our RV last Monday the propane tanks were empty.  Apparently all of the baking I’ve been doing in our little oven in the RV takes a ton of gas!  Who knew?

We’ve since fixed that problem with a bigger tank, but I know lots of folks who RV full time, and even those that don’t RV at all that love to use their slow cooker for making delicious desserts.  One of my favorite cookbooks is the Fix It and Forget It! and that’s where I found the basis for this recipe and modified it to make it easier!

S’mores Chocolate Lava Cake made in the crockpot for two! Ice Cream and Chocolate Sauce make it a perfect sweet treat.

Using a Crock Pot to make squares or bake a pudding or cake, it’s just not a connection I make when thinking about creating a dessert.

But after making this amazing S’mores Chocolate Lava Cake, my crock pot has moved to the top of my list for baking delicious Sweet Treats.

TIPS FOR A PERFECT CHOCOLATE LAVA CAKE IN YOUR CROCK POT

  • Grease the slow cooker and line it with heavy aluminum foil, leaving an overlap around the edge – so that you have something to grip to pull it out of the slow cooker
  • Bake your Chocolate Lava Cake on low.
  • To prevent too much moisture from getting on top of the cake, put a layer of paper towel just under the lid
  • Follow all of the directions exactly
  • Leave the lid in place for the required time. No peeking!
  • Turn off the slow cooker and let the cake cool for a few minutes, before serving with your favorite toppings.  Don’t worry the chocolate inside will be hot!

Just five main ingredients – cake mix, instant pudding, graham crackers, chocolate chips and mini marshmallows will get you to the promised land of chocolate!

Ingredients:
  • 1 pkg chocolate cake mix 18.5 oz
  • 1 package instant chocolate pudding mix 3.9 oz
  • 3 eggs
  • 1 cup water
  • 3/4 cup oil
  • 1 cup semisweet chocolate chips
  • 1 pkg mini marshmallows
  • 1 tbsp Kahlua
  • 3/4 cup graham cracker crumbs
  • 2 cup unsweetened almond milk
Instructions
  1. Mix Cake mix according to instructions, and pour into the greased insert of your slow cooker.

  2. Top with mini marshmallows - I use half of a package to cover the top of the cake batter.

  3. In a separate bowl, mix the instant pudding with 2 cups of cold milk.  We used Unsweetened Almond Milk.  Follow the package instructions.  

  4. Pour the pudding mixture over the mini marshmallows.  Then add the chocolate chips and sprinkle with graham cracker crumbs over the top. 

  5. Cover and cook on Low 2.5 hours.  This time is exactly right, and I've had several failures!  

  6. Serve with Whipped Cream or your favorite Ice Cream!

Nothing says Fall Harvest like a delicious apple dessert.  Apple pies, Apple Crisp, Apple Pan Dowdy, Apple tarts, apple galettes, and apple cakes and muffins!

We love all the apple desserts!

The last time I brought a freshly baked apple pie to work, it disappeared in seconds.  Well it seemed like seconds.

And a colleague who sits beside me asked if I’d ever made an Apple Pie Lasagna?

So that was the catalyst to research and find the best recipe I could for you!  And of course the easiest as well.

I found this recipe in some old cookbooks I have at home, but you know it was all about making apple pie filling from scratch.

Now you know I love to bake from scratch, as often as I can.  But this recipe, this No Bake Apple Pie Lasagna, would just be perfect for almost anything!  Potlucks, BBQs, a family dinner.  A great dessert to take to your child’s bake sale!

We’re going to have ours this weekend, when we visit The Famous Louisa.  It’s been almost a month and Mark and I missing some quality face time with our special munchkin.

I think that whoever invented Dessert Lasagna recipes should get a special award don’t you?  Like the Nobel Peace Prize or something equally prestigious, the Order of Canada maybe? 🙂

This recipe is no bake, and when you see just how easy it is, you will run to the store to buy the ingredients.

So here is what you need:

For the pie filling:

  •  Apple Pie Filling – 3 cans
  • 2 tbsp maple syrup

For the cream cheese filling:

  • 8            oz Cream cheese, softened 2
  • 1            C Powdered sugar
  • 2            tbsp Brown sugar
  • 1            tsp Cinnamon
  • ½           C Heavy Cream
  • ½           tsp Pure vanilla extract
  • 2            tbsp Caramel Sauce
  • 8            oz Cool Whip

For the lasagna:

  • 3           pkg Graham Crackers
  • 8            oz Cool Whip
  • 1            C crushed Heath Chocolate Bars (Skor in Canada)

TIPS FOR A PERFECT NO BAKE APPLE PIE LASAGNA

 

  • Beat cream cheese on medium-high speed with a wire whisk attachment until light and fluffy, and then turn off your mixer to add the dry ingredients: powdered sugar, brown sugar, cinnamon. Beat the dry ingredients into cream cheese, using your mixer on low.
  • Buy your Heath (Skor) Bars at the bulk food store.  It’s cheaper and then you can chop them up with a food processor – just until you get bite sized chunks.
  • Add heavy cream and vanilla extract. Beat on medium-high speed until whipping cream is fully mixed into cream cheese. Add caramel sauce last and mix into the batter batter.
  • Add cool whip and beat on medium speed until mixture is well combined. Divide into thirds.
  • Follow all of the directions carefully. 
  • Cover the bottom of your pan with graham crackers, in a double layer. You can break the crackers into pieces in order to get into the nooks and crannies.
  • Cover graham crackers with a layer of the cream cheese batter and spread evenly. Spoon apple pie filling over cream cheese. Add a small handful of toffee chips on top and cover with a thin layer of cool whip. Repeat this twice so that you end up with three layers. Cover the top layer of Cool Whip with additional toffee bites and drizzle with caramel.
  • Allow at least two hours in the fridge so that the graham crackers soften.
  • Store in an airtight container and keep refrigerated.

And don’t worry if you have some leftovers.  🙂  Ahh leftovers mean some snacks later for you too!
