Okay so I usually blog about pies, pastry and desserts right?  Well, that’s true, but a gal can’t live on pie alone!  So this blog is all about BBQ sauce  – my homemade BBQ sauce, so easy to do, you must try this! Tangy woodsy smoky flavour that just can’t be beat – and will make your BBQ’s the best ticket in town!

This recipe has been in the family for many years and was always ready for ribs, hamburgers, chicken, pulled pork or anything at all.  I can remember some awesome ribs at the cottage!   First the ribs would be marinated overnight in the fridge, and the marinade was full of garlic, salt, pepper, oil, vinegar – maybe a beer or two?  We would always parboil the ribs first.  Mom had a special way of having the butcher cut them as well.

I’ve found that most folks are very passionate about their BBQ Sauce!

Then the BBQ would be lit and once it was ready – trays of delicious racks of ribs would come outside, all dressed in this amazing BBQ sauce.  The cottage was a family gathering spot, for birthdays, anniversaries but usually just a hot summer weekend and you really don’t need a reason to cook up a mess a ribs do you?

Ingredients**

1 cup smoke flavoured BBQ sauce ( I use Kraft Hickory )

1/4 cup ketchup (your favorite)

1/4 cup molasses

4 tbsp. butter

2 tbsp. vinegar

2 tbsp. lemon juice

1 tsp. dry mustard

2 tsp. worcestershire sauce

1/2 tsp. hot pepper sauce (like Tabasco)

 

Preparation (about 10 minutes)

Combine all ingredients in a saucepan and simmer on med-low for 10 minutes

Let cool and pour into glass jars.

**You can double the recipe which is what I do and it will make two pints.

You know, when you have to think about what to have for dinner and you have absolutely no idea, and very little time to make something, this is IT.

This delicious tomato pie freezes really well too, so this could become a staple in your make ahead meal planning.

I used vine ripened tomatoes, and think that Roma would be another good variety.  The trick is to make sure you don’t have too much watery fruit that will turn the mixture soggy.

Baking the pie crust first prevents a soggy pie crust bottom as well.

Ingredients

ingredients for tomato pie, tomatoes, pie crust, mayonnaise, green onions, bacon and shredded cheese on a cutting board

Deep dish pie shell baked and cooled.

3 large ripe tomatoes cut into wedges (use Roma or ‘on the vine’ that have low juice content)
3 green onions finely chopped
1 cup sharp cheddar cheese grated
1 cup mayonnaise
4 slices bacon  – cooked crisp and crumbled
1/2 cup Parmesan cheese
1 tsp. Basil
Salt & Pepper to taste
Directions

1st Layer – Tomatoes onions and spices
2nd Layer – One half cup mayonnaise spread over tomatoes
3rd Layer – Sharp cheddar cheese
4th Layer – Tomatoes onions and spices
5th Layer – One half cup mayonnaise spread over tomatoes

 

Layer the bacon and Parmesan cheese on top.

Bake your tomato pie in the bottom third of an oven at 350F degrees/175 C for 40 minutes or until it bubbles and is light brown on top.

Packed with vegetables and goodness you really don’t need anything else at all!

Dec 18, 2013 Tourtière is one of those decadent holiday recipes that I only make once a year. I love preparing it because it reconnects me with my French Canadian roots. It’s a traditional Québecois meat pie that combines ground pork and beef with potatoes , onions, and spices, all enveloped in a buttery pie crust.


What is in a Tourtière?  Well in addition to deliciously lean cuts of beef and pork, that are slowly simmered, I think the unique combination of Tourtiere spices that includes cinnamon, cloves, nutmeg and summer savoury, provide an earthy, rich flavour.

This traditional tourtiere recipe can be made ahead in a batch and frozen, either in the large 9.5” family size, or in an individual 4” size.  Pop the frozen Tourtière into the oven for 30-35 minutes, add a salad and presto!  A meal in minutes. Alternatively, bake the pie in a microwavable dish, and dinner can be ready quicker than that!

An easy recipe, and perfect for beginner pie bakers.  This Tourtière recipe is based upon the Mme Jehane Benoit Tourtière recipe, so I hope you enjoy it!

Not sure what to serve with a Tourtière?  Shown here with a tart tomato relish, but you can use your imagination and add any type of side dish.  The Tourtiere is a meal unto itself, so I tend to choose lighter sides, like a tossed salad, or grilled root vegetables.

A traditional French-Canadian dish, Tourtière, or meat pie is usually served around the festive season. It's such a hearty meal and easy to make in batches, so batch bake several and put them in the freezer. You can pull one out and pop it in the oven one night when you are pressed for time. Just add a salad!

Ingredients
  • 2 pie crust recipe uses lard, makes top and bottom crust
  • 2 lb. ground beef lean
  • 1 ½ lb. ground pork lean
  • 2 onions large, cooking
  • 1 cup celery chopped
  • 1 cup parsley chopped
  • 1 ½ c water filtered
  • 3 tsp summer savory dried
  • 1 tsp cinnamon ground
  • ¼ tsp nutmeg
  • Salt and pepper
  • 2/3 cup rolled oats large flake
  • 1 egg yolk large
  • 3 tsp. milk
  • 1 tsp cloves ground
Instructions
  1. In a large saucepan with a heavy bottom, (at least 3 quarts/litres) cook, beef, pork, chopped onion, celery, parsley, water, and all of the spices and herbs – on medium heat, until the mixture comes to a boil and the meat is broken down and looks crumbly – this will take 15-20 minutes (the meat should not be pink).  Then let the mixture simmer on low heat until the liquid is gone – this will take 50 – 60 minutes TIP: keep checking to make sure your burner isn’t set to high and overcooks the mixture.
  2. Once cooked, stir in the oats and set aside to cool.  If you didn’t have time to make your pastry you can cover the mixture and put it in the refrigerator for 2-3 days.
Putting it together
  1. Put half of the meat mixture into one pie shell.  Roll out the top crust and with the edges moistened (see 5 Steps to Perfect Pie Crust!) flute the two crusts together with your fingers.  Brush the crust with a mixture of the milk and egg yolk (this will give the crust a golden glow) Cut vents in the top crust to allow steam to escape.  Repeat for the second pie.

  2. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden.  Let the pie stand for 5-10 minutes before serving.  It will be piping hot!  Each pie will serve 6 to 8 people.
  3. To freeze your authentic tourtiere recipe:  double wrap in aluminum foil and then place inside a zippered freezer bag to prevent freezer burn.

Recipe Notes

Tip: you can get the bottom crust ready, but leave the rolling of the top crust until you have your filling prepared. Prep time includes the chilling of the pastry dough.

Classic Quiche For the Best Brunch Ever!

Serve Quiche to your friends at the next Brunch!   Brunches are so popular these days, with friends meeting at a number of popular spots around town.  But often eating out means reservations, and if not, waiting in long lineups to get in!

Waiting in line to wait to eat is not my idea of good time, and certainly not for my friends.  So I prefer to host a brunch in our home, a wonderful way to entertain.

It’s always on the weekend, the house is usually cleaned up and it gives me a chance to really spend time with friends and family since the cleanup is a breeze and can be left until later.

I love to fuss with the table – my grandmother and mother taught me this.  Real cloth napkins, fun place mats or tablecloths, fresh flowers and my best dishes!

I remember the first brunch I hosted so many years ago.  I was determined to serve Eggs Benedict and had never made Hollandaise sauce in my life.

My best friend arrived a few minutes before and started to laugh as soon as she came into the kitchen.  There I was, with every saucepan I owned either on the stove or in the sink, trying to follow an elaborate recipe from a French cookbook!  My friend Connie saved the day, whipped up the hollandaise in one small pan, and the brunch was a huge success.

So my lesson was learned, and I turned my attention to where my talents did lie – and that was baking delicious pies and tarts.  Quiche is really an egg pie with lots of yummy ingredients.

My idea of a successful menu allows for many foods to be prepared ahead and frozen – especially my famous Quiche!  With that main item out of the way, I can concentrate on other items, like different types of salads, antipasto, whatever I choose.

So here is my Quiche recipe for you to enjoy.

It makes enough for six hungry guests and has been served to family and friends for many years!

Ingredients:

1 deep dish shortcrust pastry – 9.5 or 10” pie plate

½ lb thick cut bacon

8 large eggs

1 c heavy cream

2 small cooking onions finely chopped

1 tbsp unsalted butter

1 lb Gruyere or Edam cheese – cut into small cubes ( 1 ½ to 2 c)

¼ tsp nutmeg

Salt and pepper

Optional:  1 cup of frozen spinach – thawed and well drained.

 

Cook the bacon and drain it on paper towel.  Once cool, break into small pieces and set aside.

Sautee the onion in a separate pan with the butter until softened and the onion looks clear or transparent.

 

In a large bowl beat the eggs, then add the heavy cream, nutmeg and salt and pepper.  Add the onion and bacon.  Fold in the cheese.

Pour into the pie shell, making sure the mixture is just below the rim of the crust.  The quiche will expand a bit while it is cooking and you don’t want a messy oven!

Bake at 350F for 50-60 minutes.  The quiche is done when you stick a fork in the center and it comes out clean.

To freeze: wrap in two layers of heavy aluminum foil for up to a week.

Substitutes: instead of bacon, you can put in broccoli, or asparagus – be creative!

You can still serve your family and friends the best food ever!  And the best part is, it’s so easy, you really do just prep the meat, set the slow cooker, and walk away and HAVE SOME FUN!

This is when you get out the slow cooker, throw in a pork butt or pork shoulder, some water or ginger ale, your own personal spices and let it cook….slowly….until you have pork that melts in your mouth, shreds easily and becomes the best pulled pork sandwich anywhere!  Are you with me?

This is the best slow cooker pulled pork shoulder recipe ever with homemade BBQ sauce! Add some coleslaw, corn on the cob and dessert to complete this easy meal.

 

1 –  3 to 5 lb pork shoulder (depends on the size of your crowd)

2 cups of water

Salt and pepper

3-4 whole cloves

2 chopped cooking onions

2 pints of Best Homemade BBQ Sauce (see the recipe here!)

 

Season the pork shoulder with salt and pepper, and add to the slow cooker with the water, onions and garlic.

Set the slow cooker setting to low – 8 hours

Go outside and play! Seriously! Enjoy your guests, or the day and be mindful of the pleasure you are feeling in getting this amazing meal ready. 

Once pork is cooked, drain the pork shoulder

Put it back in the slow cooker pot, and using forks pull it apart, shredding all of the meat

Stir in my Best Homemade BBQ sauce

Turn it on high and let it cook for 1-2 hours

Go and relax with a good book – or have a nap!

Dinner is ready –

Place large servings of pulled pork on your favorite crusty roll, ciabatta bun, sourdough rolls (please checkout Northwest Sourdough and learn to make your own!) , add a big scoop of Creamy Coleslaw either on the sandwich or on the side – that’s a personal choice!  Round this out with fresh corn on the cob and you have Labor Day Feast!

Ingredients
Biscuits
  • 2 1/2 cups Bisquick baking mix
  • 1/4 cup cold butter
  • 1 cup sharp cheddar cheese grated
  • 3/4 cup cold whole milk
  • 1/4 teaspoon garlic powder
Topping
  • 1/4 cup melted butter
  • 1/2 tsp garlic powder
  • 1/2 tsp chopped fresh parsley
Instructions
  1. Preheat oven to 400°F
  2. Combine Bisquick and cold butter. Don't combine too thoroughly. There should be small chunks of butter about the size of peas. Tip: I used a pastry blender
  3. Add cheddar, milk and 1/4 tsp garlic powder
  4. Mix by hand until combined, but don't over mix
  5. Drop 8 equal portions into the greased mini loaf pan cavities
  6. Bake for 15-17 minutes or until tops are light brown or a toothpick comes out clean
  7. Melt 1/4 cup butter in a bowl
  8. Stir in 1/2 tsp garlic powder and the chopped parsley
  9. Use a pastry brush to spread garlic butter mixture over tops of biscuits while they are still warm
  10. Enjoy!
