Classic Quiche For the Best Brunch Ever!

Classic Quiche For the Best Brunch Ever!

Classic Quiche For the Best Brunch Ever!

Serve Quiche to your friends at the next Brunch!   Brunches are so popular these days, with friends meeting at a number of popular spots around town.  But often eating out means reservations, and if not, waiting in long lineups to get in!

Waiting in line to wait to eat is not my idea of good time, and certainly not for my friends.  So I prefer to host a brunch in our home, a wonderful way to entertain.

It’s always on the weekend, the house is usually cleaned up and it gives me a chance to really spend time with friends and family since the cleanup is a breeze and can be left until later.

I love to fuss with the table – my grandmother and mother taught me this.  Real cloth napkins, fun place mats or tablecloths, fresh flowers and my best dishes!

quiche for brunch

I remember the first brunch I hosted so many years ago.  I was determined to serve Eggs Benedict and had never made Hollandaise sauce in my life.

My best friend arrived a few minutes before and started to laugh as soon as she came into the kitchen.  There I was, with every saucepan I owned either on the stove or in the sink, trying to follow an elaborate recipe from a French cookbook!  My friend Connie saved the day, whipped up the hollandaise in one small pan, and the brunch was a huge success.

So my lesson was learned, and I turned my attention to where my talents did lie – and that was baking delicious pies and tarts.  Quiche is really an egg pie with lots of yummy ingredients.

My idea of a successful menu allows for many foods to be prepared ahead and frozen – especially my famous Quiche!  With that main item out of the way, I can concentrate on other items, like different types of salads, antipasto, whatever I choose.

So here is my Quiche recipe for you to enjoy.

It makes enough for six hungry guests and has been served to family and friends for many years!

Ingredients:

1 deep dish shortcrust pastry – 9.5 or 10” pie plate

½ lb thick cut bacon

8 large eggs

1 c heavy cream

2 small cooking onions finely chopped

1 tbsp unsalted butter

1 lb Gruyere or Edam cheese – cut into small cubes ( 1 ½ to 2 c)

¼ tsp nutmeg

Salt and pepper

Optional:  1 cup of frozen spinach – thawed and well drained.

Cook the bacon and drain it on paper towel.  Once cool, break into small pieces and set aside.

Sautee the onion in a separate pan with the butter until softened and the onion looks clear or transparent.

In a large bowl beat the eggs, then add the heavy cream, nutmeg and salt and pepper.  Add the onion and bacon.  Fold in the cheese.

Pour into the pie shell, making sure the mixture is just below the rim of the crust.  The quiche will expand a bit while it is cooking and you don’t want a messy oven!

Bake at 350F for 50-60 minutes.  The quiche is done when you stick a fork in the center and it comes out clean.

slice-of-quiche

To freeze: wrap in two layers of heavy aluminum foil for up to a week.

Substitutes: instead of bacon, you can put in broccoli, or asparagus – be creative!

How To Make A Great Burger for the BBQ!

How To Make A Great Burger for the BBQ!

A great homemade hamburger recipe for your next BBQ!

My husband Mark and I are embarking on new journey – to become full time RV’ers by next summer.
Actually Mark is full time and I am working for one more year.  It will all go by so fast.
So this blog post is all about how to make a great homemade hamburger and this recipe is one that Mark created just this past weekend.  We pretty much split up the kitchen into two camps.  I’m the Baker and he’s the Chef, so I’ll let him tell it…

How to Make A Great Burger? Try our three meat hamburger recipe, where we use turkey, beef and pork to create juicy delicious burgers everytime! Use our Homemade Best BBQ Sauce to round out the amazing flavors in these burgers!

Our family and friends often ask me how to make a great burger for the BBQ Grill.  My burgers are famous!

Well, the essence of this homemade hamburger recipe is the combination of the turkey, beef and pork that triples both the flavor and juicy tenderness that we all love in a good burger.

When choosing ground beef, I use lean or medium cuts — you need a little fat to make the burgers tender.  In addition to the ground beef, I included turkey and pork.  Three  500 gram/1 lb. packages will yield eight well sized burgers.

Bobby Flay’s best burger tips – TODAY.com

Aug 30, 2017 An 80-percent lean, 20-percent fat ratio is Flay’s choice for burger patties, because of the relatively high fat content—it guarantees you’ll get a juicy burger. As TODAY’s Matt Lauer points out, the blend is not exactly diet-friendly, but the chef says it’s the worth the occasional splurge: “To me, if you’re going to …

I don’t measure ingredients, so I have listed them by name only. The fun part about cooking is experimenting with flavors and amounts until you get the “yummmm” factor. (Note: Mark cooks by taste and touch – so I’ve added the measurements to this recipe)

How To Make A Great Burger – Ingredients and Instructions!

Into a large bowl, combine the meat (s) until they are thoroughly mixed. Using a potato masher helps speed up the process.

Add the following spices to taste: *

  • 1 tbsp each of Salt, pepper, Worcestershire sauce, garlic salt, Herbs de Provence (rosemary, marjoram, thyme and savory)

Mix in

  • 3 tbsp extra virgin olive oil
  • 1 tbsp So Hot Red Romp Sauce – adjust to taste (depends on hot you like your food!)
  • 1 package (10 oz) of mushrooms finely chopped
  • ½ chopped sweet onion

Mix everything together and shape into patties.  You will get 8 burgers from this recipe.

Make sure your barbecue grill is smoking hot. You won’t have to worry about burning the burgers because the combination of meats prevents this from happening.

Grill until almost done, then add our famous Best BBQ Sauce and cook until the sauce is caramelized.

We dressed these amazing Triple Flavor Homemade Hamburgers with heirloom tomatoes, garlic dill pickles, and our favorite condiments!

We served our burgers on fresh crusty buns or kaiser rolls with our favorite salad, like our Creamy Coleslaw!  Voila! an instant feast.

These amazing homemade burgers would be perfect for a family BBQ or neighborhood potluck.  Our post on How To Plan a Great BBQ Party, will help you plan a perfect party!

**This sauce is made by two former neighbours, Sabrina and Diane in Bowmanville, ON, Canada. The base for the sauce is Jamaican scotch bonnet peppers with black and yellow mustard seeds. I will warn you that if you’re not familiar with scotch bonnet peppers you can substitute tabasco or any other hot sauce.  You can find it at www.sohotsauce.com

If you are looking for an easy family recipe for dinner tonight, and one that’s lighter in calories than the my usual easy double crust chicken pot pie, you’ve come to the right place!

This homemade Chicken Pot Pie Recipe with puff pastry is the easiest recipe you will ever make! One roasted chicken, frozen puff pastry, some veggies and PRESTO! A Chicken Pie even the Pioneer Woman will love!

Just thinking about taking a Chicken Pot Pie right from the oven makes my mouth water.

The tender chunks of chicken, nestled among onion, potato, peas or carrots and smothered by a deliciously flaky puff pastry – that’s how I spell c-o-m-f-o-r-t.

There are a number of chicken pot pie recipes around. This chicken pie with puff pastry is one I adapted a few years ago from an easy double crust chicken pot pie recipe in a food magazine sponsored by Walmart.  I don’t think it’s in print now.

But the most famous is the Pioneer Woman Chicken Pot Pie.  It’s to die for!

The first time I made the recipe, I followed the instructions exactly and used a piecrust for the top and bottom.  It was so awesome!

But you know me, right?!  I love to change things up, and find an easier, and quicker way to make dinner!

I like this homemade easy chicken pot pie with puff pastry recipe because:

  • it’s full of flavor
  • comes together very quickly
  • it’s a skinny chicken pot pie! Way lighter in calories than using traditional pie crust
  • the ingredients are either in your pantry or waiting to be picked up on the way home from work!

My adaption shows you how to make your chicken pot pie with puff pastry in a cast iron skillet, and use puff pastry as a top crust! I love to bake using my cast iron skillets – if you don’t have one, check out the link below – and buy one.

These pans will never wear out, you will have it for life!  Just be sure to clean them with only water and a scrub brush and then treat them with a small amount of cooking oil.

The accessories shown here includes a silicone handle, scraper and brush which will make taking care of your cast iron skillet so easy!

Traditional chicken pot pies have a double crust, and those are certainly delicious.  But it does take extra time if you are making your pie crust from scratch.  I have a wonderful How To Make Perfect Flaky Pie Crust guide to help you with that!

But we want to save some time today right?

This homemade Chicken Pot Pie Recipe with puff pastry is the easiest recipe you will ever make! One roasted chicken, frozen puff pastry, some veggies and PRESTO! A Chicken Pie even the Pioneer Woman will love!

I think chicken pot pie is the number one choice of savory pies – You can make it in a number of ways and sizes. Mini chicken pot pies are perfect for a quick meal.

Bake up a batch and pop them in the freezer. Then thaw and serve with a salad!

I remember buying chicken pies in bulk from a famous frozen food store, they were convenient, but really didn’t have much flavor.

Once you try this chicken pot pie recipe with puff pastry  that is so quick to make and delicious – there will be no turning back.

This skinny chicken pot pie recipe with puff pastry is a great choice for family dinner because: • It’s so easy – double or triple the recipe and freeze! • The ingredients are readily available – local foods especially! • The flavours and textures are delicious and rich – folks will want seconds!Click To Tweet

With just Mark and I at home, making a full tray or baking dish of just one recipe doesn’t always make sense.

Making mini portions allows us to have individual meals that can be popped into the microwave.  Am I right?

So we’re making mini spaghetti pie casseroles and using this awesome new mini pie baking tin I just got.

I think it’s very cool, don’t you?

I had some extra ingredients, so  I doubled the recipe and also baked a 9″ spaghetti pie – to freeze for one of ‘those’ days, when I don’t feel like cooking a big dinner – 🙂

What I like about this recipe is that you actually use whole tomatoes, and season it yourself, not like the jar sauces that are already seasoned for spaghetti.

It has a really FRESH taste, that’s BIG on flavor.  Know what I mean?
