This recipe combines two of my favorite foods – spaghetti and pie!

A match made in heaven to be sure and so quick and easy to make, I’m wondering why I haven’t thought of this before?

I know you are going to love these mini spaghetti pies!  And those picky eaters of yours?  Yep, you got this one!

A delicious spaghetti ‘pie crust’ topped with a yummy meat sauce, and lots of Parmesan, ricotta and mozzarella cheese.  It doesn’t get much easier.

With just Mark and I at home, making a full tray or baking dish of just one recipe doesn’t always make sense.

Making mini portions allows us to have individual meals that can be popped into the microwave.  Am I right?

So we’re making mini spaghetti pie casseroles and using this awesome new mini pie baking tin I just got.

I had some extra ingredients, so  I doubled the recipe and also baked a 9″ spaghetti pie – to freeze for one of ‘those’ days, when I don’t feel like cooking a big dinner – 🙂

What I like about this recipe is that you actually use whole tomatoes, and season it yourself, not like the jar sauces that are already seasoned for spaghetti.

It has a really FRESH taste, that’s BIG on flavor.  Know what I mean?

What You Need:

Crust
• 2 cups spaghetti
• 1/2 cup Parmesan cheese
• 1 egg
• 1 1/2 tsp butter
Filling
• 2/3 cup ricotta cheese
• 2 tsp butter
• 1/2 cup onion
• 1/2 cup green pepper
• 1 clove garlic
• 6 oz lean ground beef
• 1 cup canned whole tomatoes
• 2 tsp tomato paste
• 1 cup mozarella cheese

Let’s Make It!

1. Combine all ingredients for crust
2. Spray mini pie tin (or 9″ pie plate) with nonstick cooking spray

3. Spread spaghetti mixture over bottom and up the sides to form a crust
4. Preheat oven to 350F
5. Spread ricotta cheese over the bottom of crust and set aside
6. in a skillet heat butter, add onion, green pepper and garlic and sauté until tender
7. Add beef, tomatoes, reserved liquid, and tomato paste
8. cook, stirring often until thickened and cooked through
9. spoon beef mixture over cheese and bake 20 to 25 minutes
10. Sprinkle each pie with mozzarella cheese and bake until the cheese is melted and begins to brown – about 5 minutes
11. Remove from oven and let stand 5 minutes before serving

Coleslaw can take many forms but the tangy sweetness in this recipe is always great with outdoor BBQ, smoked meat and our slow cooker pulled pork.  It comes together in minutes and you can serve it again the next day.

In fact, when I first started to make it, I was working in my parents’ catering business.  And everyone of those banquets needed a ton of coleslaw!  Back then we didn’t use a food processor – we would ask our wholesaler to shred the cabbage and carrots for us and we would then chop it much more finely, with all of the onion. When I first started making coleslaw and taking it to family dinners, I would use a hand grater, but when my sweet mother-in-law found out, she went right out and bought a small food processor for me.  I was overcome with the gift, but her explanation was simple.  “This is the best creamy coleslaw recipe I have ever tasted, and if I want it every time you come for dinner, then I need to know it isn’t such a chore for you to make.”  Isn’t that sweet? 🙂

Now you know I used that little food processor for a very long time, it was a Cuisinart, I think, and it just gave up the ghost and stopped working a couple of months ago.  I used it for everything from delicious flaky pie crust to chopping up my coleslaw veggies.

So I had to go shopping for a new one.  After researching the market, the best deal I could find was on Amazon.  If you can get one for under $70, then grab it, because that’s a great deal.  I looked at these two and chose the Cuisinart based on experience.

One medium sized head of green cabbage

2-3 small cooking onions

2-3 medium carrots

1 1/2 cups mayonnaise or your favorite salad dressing

2 tbsp. sugar

Salt and pepper

Pinch of paprika

 

Preparation: (Prep time – 30 minutes)

Cut the cabbage into chunks and shred in your food processor – but pulse only, so that you get a coarse grind.

Chop the onion and the carrots in the food processor as well, chopping both finely.

Place into a large mixing bowl, add the sugar, salt, pepper, paprika and mayonnaise and blend well.

Sprinkle with paprika and place in refrigerator until ready to serve.

Shepherd’s Pie in our home was traditionally made with ground beef and then carrots, and crowned with a thick layer of creamy mashed potatoes.  Over the years I’ve experimented with different toppings, meat combinations and vegetables – and I really like this latest version of the classic shepherd’s pie.

I’m often asked “How do I make the gravy in Shepherd’s Pie?” The secret to a great Shepherd’s Pie in my opinion, is to make sure the ground meat doesn’t dry out in the oven.  To prevent that, we add beef broth to the ground beef and lamb, right near the end of cooking.  And I also mix in 2 tablespoons of corn starch as thickener.

Did you ever wonder where the name Shepherd’s Pie came from?  Well Wikipedia says Cottage pie or shepherd’s pie is a meat pie with a crust of mashed potato. The dish is commonly made with beef or lamb.  It was a staple in our household when my family was growing up, and now it’s a particular favorite of my grandson’s!

 

  • 1 lb each of ground beef and lamb
  • 1 medium sweet onion
  • 5 stalks of celery
  • 4 cloves of garlic
  • 2 tbsp olive oil
  • 2 cup of frozen baby peas and carrots
  • 2 ½ cups cooked potatoes (russet or Yukon gold)
  • 1/4 cup heavy cream
  • 1/4 cup butter
  • 1 tsp dried basil
  • 1/2 cup beef broth
  • 2 tbsp corn starch

 

 

Using a cast iron skillet

Base:

  • Chop the sweet onion, celery and garlic into coarse pieces and cook in the olive oil until tender – the onions will be translucent
  • Remove the onion mixture from the skillet and set aside
  • Crumble the ground lamb and ground beef and stir both into the skillet
  • Cook over medium heat until the meat is well cooked, and breaks apart easily
  • Add the onion, celery and garlic mixture back into the meat and mix
  • Add a layer of frozen peas and carrots (they will cook in the oven)

  • Mash the cooked potatoes until they are light and fluffy (I stir in a 1/4 cup of cream and 1/4 cup of butter)
  • Top the ground beef, carrots and peas with a thick layer of creamy mashed potato and sprinkle with chopped basil

Bake in your skillet, in the middle of the oven at 375F for 55 minutes or until the potatoes are golden.

Dig in!

    This 5 Layer Tomato Pie is so easy and delicious, you will be making it again and again.

    You know, when you have to think about what to have for dinner and you have absolutely no idea, and very little time to make something, this is IT.

    We love savory pies, like our awesome Chicken Pot Pie in Puff Pastry – it’s delish!

    This delicious tomato pie freezes really well too, so this could become a staple in your make ahead meal planning.

    I used vine ripened tomatoes, and think that Roma would be another good variety.  The trick is to make sure you don’t have too much watery fruit that will turn the mixture soggy.

    Baking the pie crust first prevents a soggy pie crust bottom as well.

    Ingredients

    Deep dish pie shell baked and cooled.

    3 large ripe tomatoes cut into wedges (use Roma or ‘on the vine’ that have low juice content)
    3 green onions finely chopped
    1 cup sharp cheddar cheese grated
    1 cup mayonnaise
    4 slices bacon  – cooked crisp and crumbled
    1/2 cup Parmesan cheese
    1 tsp. Basil
    Salt & Pepper to taste
    Directions

    1st Layer – Tomatoes onions and spices
    2nd Layer – One half cup mayonnaise spread over tomatoes
    3rd Layer – Sharp cheddar cheese
    4th Layer – Tomatoes onions and spices
    5th Layer – One half cup mayonnaise spread over tomatoes

     

    Layer the bacon and Parmesan cheese on top.

    Bake your tomato pie in the bottom third of an oven at 350F degrees/175 C for 40 minutes or until it bubbles and is light brown on top.

    Packed with vegetables and goodness you really don’t need anything else at all!

Tangy woodsy smoky flavour that just can’t be beat – and will make your BBQ’s the best ticket in town!

    This recipe has been in the family for many years and was always ready for ribs, hamburgers, chicken, pulled pork or anything at all.  I can remember some awesome ribs at the cottage!   First the ribs would be marinated overnight in the fridge, and the marinade was full of garlic, salt, pepper, oil, vinegar – maybe a beer or two?  We would always parboil the ribs first.  Mom had a special way of having the butcher cut them as well.

    I’ve found that most folks are very passionate about their BBQ Sauce!

    Then the BBQ would be lit and once it was ready – trays of delicious racks of ribs would come outside, all dressed in this amazing BBQ sauce.  The cottage was a family gathering spot, for birthdays, anniversaries but usually just a hot summer weekend and you really don’t need a reason to cook up a mess a ribs do you?

    Ingredients**

    1 cup smoke flavoured BBQ sauce ( I use Kraft Hickory )

    1/4 cup ketchup (your favorite)

    1/4 cup molasses

    4 tbsp. butter

    2 tbsp. vinegar

    2 tbsp. lemon juice

    1 tsp. dry mustard

    2 tsp. worcestershire sauce

    1/2 tsp. hot pepper sauce (like Tabasco)

     

    Preparation (about 10 minutes)

    Combine all ingredients in a saucepan and simmer on med-low for 10 minutes

    Let cool and pour into glass jars.

    **You can double the recipe which is what I do and it will make two pints.
