Old Fashioned Chocolate Mayonnaise Cake Recipe | Grandma’s Best!

A rich chocolate cake, moist and dense with a rich chocolate buttercream is the stuff that dreams are made of.  This Chocolate Mayonnaise Cake is the ultimate chocolate lover’s cake to be sure.  Don’t you just love those sliced strawberries on top?  If you follow my tips for this incredibly moist old fashioned chocolate mayonnaise cake, you can say goodbye to all those old dry chocolate cakes of the past.  This homemade, one bowl scratch cake is so easy to make you’ll also say goodbye to cake mixes!  Promise!

You will need: 1 cup mayonnaise, 1 cup white sugar, 1 tsp vanilla, 2 cups all purpose flour, 4 tbsp unsweetened cocoa, 2 tsp baking soda, 1 cup water and an 8 X 8 or 9 X 9 square baking pan.

Yup, you heard right.  When you think about it, it all makes sense, since mayonnaise is full of eggs and oil right?  Until I found this chocolate mayonnaise cake recipe in Grandma’s Recipe Book that she had clipped from a Hellman’s Chocolate Mayonnaise Cake ad, I had no idea.

But since then, since making my very own Chocolate Mayo Cake, lots and lots of folks have shared their Mom or Grandma used to make it for them too!

Why do I call this awesome chocolate mayonnaise cake recipe old fashioned?  Well…..

 

My grandparents lived on a farm and lived through the Great Depression.  So I’m sure you understand that they would use up everything they could, since you didn’t know when you be able to get that something again.

Things like envelopes became note paper, and at some point, my Grandma must have come across an old financial ledger that wasn’t being used.  So what did she do?  Yes, you’re right.  That’s when she started to write down her famous recipes.

 

Or she would clip them from the weekly newspaper.  That’s how I found so many of her old recipes, including this one from Hellman’s Mayonnaise.

 

Many of these recipes were from the 40’s and 50’s, so maybe I should have used the word ‘vintage’ instead.  But when I think of my Grandma, vintage doesn’t come to mind.  She was a delight, and certainly very old-fashioned by today’s standards.

I remember visiting during the summer months and staying for a week or two.  We always had so much fun, playing with the neighbourhood kids, catching frogs in the creek behind their house, watching thunderstorms in the summer porch.

 

And every once in a while, when it wasn’t too hot, Grandma would bake.  Often it was her famous Date & Nut Cookies, but sometimes, if my brother and I had been on our best behaviour, she would bake a Chocolate Mayo Cake.

 

We often squabbled over who would get the corner piece, you know the one with all that fudgy chocolate frosting?

 

But usually my Grandfather would solve the squabble and take it for himself!

 

My husband Mark loves chocolate cake, and I’ve made several different recipes.  I even recently made him the Ding Dong Cake from iambaker.net!  Now that was a lot of work, but definitely worth the effort.

TIPS FOR A PERFECT CHOCOLATE MAYONNAISE CAKE

  • Use fresh ingredients.  Baking ingredients like flour and baking soda, even cocoa have expiry dates on them
  • Grease and flour your baking pan to make it easy to serve
  • I use Hellman’s Real Mayonnaise, but use real mayonnaise, not a salad dressing blend
  • Follow all of the directions carefully
  • Let the cake cool completely before frosting, or you will have a runny mess on your hands

As I mentioned above, Grandma was an amazing cook, raised on a farm, and had to provide hot and hearty meals to the farm hands every day for their noon dinner.

 

I can only imagine what time she had to get up to make the meal, since we’re talking early 1900’s and no modern-day appliances to ease the work!  Well fast forward to today and her recipes still live on.

How Do I Make A Chocolate Mayonnaise Cake?

Directions –  Preheat oven to 350F
1. Mix the mayonnaise, sugar and vanilla together in a large bowl and set aside.
2. Sift the flour, cocoa and baking soda together.
3. Add the flour mixture alternatively to the mayonnaise mixture, and add the cold water
4. Pour batter into a 9 X 9 greased and floured baking pan.
5. Bake at 350F for 35 to 40 minutes or until a toothpick in the center comes out clean.
6. Cool completely and frost with a Dark Chocolate Buttercream Frosting.

And serve with a big scoop of French Vanilla Ice Cream!

This Old Fashioned Chocolate Mayonnaise Cake batter mixes up very quickly and the ingredients are right in your pantry.  I think everyone has a jar of mayonnaise on hand.

I just love using a bundt pan for cake recipes, but this time I decided to use a 9X9 square pan and I’m glad I did!  The cake rises beautifully, and because you grease and flour the pan, it will drop out quite nicely on an inverted cake plate.

This is The Best Gluten Free Pumpkin Pie Recipe | Easy & Delicious!

Creamy rich and lightly spiced, but no one will know this amazing recipe is for a gluten free pumpkin pie!  Yes it is?! How could gluten free taste so good, you ask?  Well pumpkin pie is a must for the holidays, and if there is someone in your family that is gluten intolerant but loves pumpkin pie, then this recipe is perfect for you.  You will save the day and their holidays with this easy to make delicious and decadent gluten free pumpkin pie.   And we’ve got some baking tips too! If you follow the recipe tips I’ve listed for you in this post, your pumpkin pie top will never crack again.  I promise.

You will need: one 9″ gluten free pie crust, 1 can pumpkin puree, ginger, cinnamon, sugar, eggs, 1 can sweetened condensed milk, nutmeg, whipping cream and some pecan halves to garnish.  That’s it!

Pumpkin pie season is here and while I’m not one, many folks simply can’t tolerate gluten or wheat in their diets.  My regular pumpkin pie recipe includes a heaping tablespoon of flour in it, so I wanted to create a gluten free pumpkin pie recipe that everyone could enjoy.

Not only is this amazing pie gluten free, it’s full of rich, creamy flavor.  That’s the beauty of creating homemade desserts too.  You know that you are putting real food into the recipe, not chemically laden foods.

My daughter has Celiac Disease and it is a very serious condition.  Thankfully there are many, many gluten-free alternatives today.  Gluten free is definitely mainstream.

This Simple Gluten Free Pumpkin Pie Recipe is not only lovely to look at – it tastes amazing.  Very rich and creamy, and made with my gluten free pie crust recipe, it’s the bomb!

The original recipe came from a label off a can of Eagle Brand Condensed Milk, and I’ve tweaked it a bit just for you .

Ingredients

  • one 9″ gluten-free pie crust – unbaked
  • one 14 oz/398ml can pumpkin (unsweetened)
  • 1 can  Sweetened Condensed Milk
  • 2 eggs
  • 1 tsp cinnamon
  • one-half tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 salt
  • Garnish: whipped cream and pecan halves

TIPS FOR PERFECT GLUTEN FREE PUMPKIN PIE

  • Preheat the oven to 425F/220C
  • In a large bowl combine the filling ingredients and mix well.  I use a small handheld mixer, but be careful.  Pumpkin pie filling will spray all over the place!
  • Next, pour the filling into the gluten free pie crust shell.  You can make your own – using gluten free flours or buy one frozen and already prepared.  There are some quality prepared pie crusts in grocery stores now!
  • Follow all of the ingredients carefully.
  • Bake 15 minutes at 425F/220C and then reduce your oven temperature to 350F/180C and bake 25-30 minutes.
  • THIS IS THE IMPORTANT PART! For the final 10-15 minutes, turn the oven off and leave your pie inside.  This will prevent the gluten free pumpkin pie from overcooking or having the filling will ‘crack’ around the edges.
  • Finally, cool and garnish with whipped cream and pecan halves.
  • Make sure you place any leftovers in the refrigerator.  I find pumpkin pie will keep about a week if kept cold.

GLUTEN FREE PUMPKIN PIE RECIPE

I think this pie is so delicious.  I almost prefer it to my other pumpkin pie recipes!  This simple gluten free pumpkin pie recipe makes a beautiful dessert, safe for those who suffer from celiac disease or just can’t tolerate gluten in their diets.  Yay!!! You could also serve it with your favorite non-dairy topping, or if dairy isn’t an issue, a wonderful french vanilla ice cream.  This pie is perfect for the holidays, Thanksgiving and Christmas.  Or just because you want to celebrate the harvest with an exquisite pumpkin pie.  Anyway, gluten free or not, this pie will be a huge hit with your family and friends!

This Starbucks Copycat Recipe For Lemon Loaf Cake is so easy to make, your family will want you to make it all the time!

I think a freshly baked loaf makes a wonderful gift.  I love to take a freshly baked ‘something’ when I’m invited out for dinner or just because.

That sweet and tart citrus flavour wrapped up in a dense loaf, when the crumbs all stick together on your fork, you know what I mean? Oh and make sure there is lots of creamy white glaze drizzled all over it.

This is a quick breads recipe, which means when mixing the batter, to use a very light hand when combining the dry ingredients into the wet.

Just like muffins or other quick bread recipes, careful mixing will result in a dense, but very moist and tender Lemon Loaf  Cake.

Ingredients
Cake1 (18.25 ounce) package yellow cake mix
  • 2 pkgs lemon pudding mix 4.3 ounce (pie filling) non-instant l
  • 1/2 cup vegetable oil
  • 4 eggs large
  • 8 ounces sour cream
  • 1/2 cup milk
  • 6 tablespoons lemon juice freshly squeezed
Icing
  • 3 tablespoons lemon juice freshly squeezed, or more to taste
  • 2 1/2 cups confectioners' sugar
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans.
  2. Combine cake mix, pudding mix, oil, eggs, sour cream, milk, and 6 tablespoons lemon juice into bowl of stand mixer; beat for 2 minutes and pour into prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pans for 20 minutes before removing from pans to cool completely on a wire rack.
  4. Beat confectioners' sugar and 3 tablespoons lemon juice together in a bowl until smooth; spread thickly over the top of the loaves and let set before slicing, sprinkle with lemon zest.

This apple crisp is one of those classic recipes that I often make up as I go along!  Sometimes I mix in oatmeal, sometimes just flour, and then again I’ll mix both.  I think the secret to a great apple crisp is the apples and how you prepare them and also the crunchy sweet topping that is full of butter, brown sugar and other earthly delights!

I like to prepare the apples just like I was getting ready to bake an apple pie.  My post Mom’s Apple Pie…. shows you what I mean.  When you mix the varieties of apples, and the spices, like ginger, nutmeg and cinnamon, the result is amazing!  And I always add a little lemon and lemon zest to bring out that sweet, juicy tartness.

 

My mother-in-law was a wonderful baker and this is her recipe.  I would often drop in at my in-laws for dinner after work and there was almost always a home baked dessert.  As soon as I walked in the door, I knew apple crisp was on that night’s menu!  The delicious smells of baked apple, brown sugar and spices created such a wonderfully warm and comforting atmosphere.  Home.

I’ll be making a trip to the country to get those early fall apples, McIntosh, Braeburns, Granny Smiths, and Melbas to name a few.  They are so beautiful and smell so good when they are freshly picked.  My favorite apple is a McIntosh, and I often blend Granny Smiths with them for baking.

An easy to make and bake apple dessert, full of crunchy goodness, brown sugar, butter, this fall classic is always a crowd pleaser

Ingredients
For the apple base6 medium apples
  • ½ c white sugar
  • ½ c brown sugar
  • 1 tbsp. flour
  • 1 tsp Cinnamon
  • ¼ c Butter
  • ½ fresh lemon squeezed
  • 1 tsp lemon zest
For the Topping1 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup coarse oatmeal
  • 1/2 cup unsalted butter softened
Instructions
  1. Preheat oven to 350F
  2. Grease a 9" square baking dish
  3. Peel, core and thinly slice the apples like you would for a pie
  4. In a large mixing bowl, place the apples, sugars, flour, cinnamon and lemon
  5. Toss until the apples are well coated
  6. Place the apple mixture in the bottom of the baking dish spreading it evenly
  7. Cut the butter into small pieces about the size of a nickel and place them randomly over the top of the apple mixture
  8. Mix the topping ingredients together in a separate bowl and making sure the butter is spread and mixed well.
  9. The topping should clump together in your hand.
  10. Spread the topping thickly over the top of your apple mixture.
  11. Bake in the oven at 350F for 55 minutes or the best timing for your oven.
  12. Top with freshly whipped cream or ice cream and Enjoy!

A delightfully rich and creamy homemade pumpkin pie is the perfect holiday dessert.  Thanksgiving dinners everywhere traditionally include this time honoured classic pie recipe.  With just a hint of pumpkin pie spice, the creamy pumpkin pie filling is made with love and over 60 years of family traditions have done into this recipe.   And then there is the pie crust!  Our favorite recipe buttery pie crust can be made ahead of the day, so that you can roll it out once you’re ready to bake.  You can already smell the blended spices of cinnamon, ginger and nutmeg, can’t you?  I share this family recipe with you with love, and encourage you to start to build your own pumpkin pie traditions.

You will need: milk, eggs, pumpkin pie spice, sugar, flour, canned pumpkin puree (not pumpkin pie filling) one deep dish pie shell, one 10″ pie plate, an immersion blender or hand held mixer, mixing bowl, measuring spoons and cups

Family celebrations just wouldn’t be complete without a homemade pumpkin pie.

This classic dessert is the star of many family celebrations like Thanksgiving, Christmas and Easter.   Just the thought of  the heady aroma of spice and sweetness that fill our homes at that time makes me really want a slice of that pie RIGHT NOW!

 Some folks love their pumpkin pie wreathed in whipped cream.  Or ice cream.

Just the pie for me thanks.

Pumpkin is actually a vegetable and typically synonymous with Autumn, giving thanks and Hallowe’en!  Part of the squash family you can cook the meat of the pumpkin down (peeled and diced) and once that is done – puree it in the food processor.  That’s how to make homemade pumpkin pie from a real pumpkin.

These pumpkins will make scary Jack O Lanterns won’t they? I use canned pumpkin puree and have for years.

But in today’s busy world, few of us have time for all of that effort, when cooked pumpkin is available all year long at the grocery store – in a can.  So while I believe that this is the best homemade pumpkin pie recipe from scratch – it is so much better than the canned pumpkin pie filling they have in the store.

The most famous brand of cooked pumpkin is Libby’s and you can find Libby’s pumpkin pie filling just about anywhere.  And the company is super famous for it’s Libby’s pumpkin pie recipe on the can!  

In fact, I think that’s where my Mom’s pumpkin pie recipe originates from.

Besides I would much rather spend the time save by going outdoors for a walk with my grandchildren and the dogs, that feverishly cooking over a hot stove.  You know what I mean.

I love taking a walk with my grandchildren after a big family Thanksgiving dinner finished with a big ole slice of pumpkin pie!

This is also one of those great pie recipes that you can make a couple of days ahead.  It will keep up to a week in your refrigerator.  I’ve frozen pumpkin pies too and they’ve been fine.  You may want to warm them up in the oven – around 300F for 10 to 15 minutes.

I think pumpkin pie is where my passion for baking and pies actually began.  Yes this was another one of those pies baked by Grandma – but I learned to enjoy my Mom’s homemade pumpkin pie even more.

Grandma’s tended to be a dark version that you often see and very spicy.

Mom’s homemade pumpkin pie recipe was lighter in color, with a lovely blend of spice and sweetness.

Hands down it was the best.  So much so that when I went away to college – a full pumpkin pie would travel back to school with me.  I was really popular after a long weekend at home!

Fast forward a few years and pie became a staple in our family catering business menu.  The bulk of our business was banquet catering – for weddings, sports and business events.  Mom’s homemade pumpkin pie recipe was always asked for so we usually planned on making enough so that most could have seconds. You really can’t eat just one piece of pumpkin pie!

Pumpkin Pie is often the star of a traditional Thanksgiving Dinner. Next to the turkey of course.

When combining the pumpkin, eggs, sugar, milk, flour and spices, make sure you mix all ingredients really well – using either a hand mixer or  a large food processor with a really deep bowl.

I’ve always used 2% milk (and suggested sour cream) however there are lots of homemade pumpkin pie recipes that used either condensed milk or heavy whipping cream.  Our Kahlua Pumpkin Pie recipe uses condensed milk and it is so yummy!

TIPS FOR PERFECT PUMPKIN PIE

Since I’ve probably baked a few hundred pumpkin pies during my forty years as a baker I do have a couple of important tips!

  • This liquid is very light and will spray everywhere so I use a really deep mixing bowl and even cover my kitchen counter with a towel.
  • Want to use your own homemade pumpkin pie spice?  You can get that recipe right here!
  • When filling the pie crust shell, only fill about three quarters full – the filling will expand as it cooks.
  • Follow all the directions carefully
  • There is no need to Blind Bake (pre-bake) the pie shell.  This recipe temperature and time is perfect.
  • Let your homemade pumpkin pie cool in the oven to prevent the top from cracking.

 

PUMPKIN PIE RECIPE

This is a Perfect Pumpkin Pie.  Rich and creamy, light in color, and not too heavily spiced.  The sweetness combined with my buttery, flaky pie crust just can’t be beat.  When you take a bite of this pumpkin pie, your mouth will do a happy dance.  I promise! And for all those pumpkin pie lovers in your family, they will join you in that happy dance.  Pumpkin Pie is so Thanksgiving, but we always had it at Christmas too!  But like I always say, Pumpkin Pie is perfect anytime.

Ingredients
  • 1 pie shell One deep dish or two 9” unbaked shortcrust
  • 1 can pumpkin prepared
  • 2 cups milk or use 2 cups sour cream!
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 2 Eggs
  • 2 tbsp flour heaping, or gluten free flour!
Instructions
  1. Mix all ingredients really well – using either a hand mixer or food processor.
  2. Tip: This liquid is very light and will spray everywhere so I use a really deep mixing bowl and even cover my kitchen counter with a towel.
  3. Fill pastry recipe pie shell ¾ full, the filling will expand as it cooks.
  4. Bake at 350 for 50-60 minutes, depending on your oven
  5. Pie is finished when a knife comes out clean in the centre – it may crack a little around the edges.
Recipe Notes

Prep time does not include making the piecrust - just rolling it out and filling. You could add another 30 minutes for that.

Serve warm with real whipped cream!

We all love easy muffin recipes and this is a great one using freshly chopped apples!  I like to use Granny Smith apples, like the ones shown here – but any apple that is good for baking will do.

I love this apple pie muffin recipe as a healthy choice that I can grab and go – on my way to work, the golf course, or out to walk the dogs!

 

They are so full of flavor and of course a little brown sugar never hurt anyone, am I right?

What’s the secret to light fluffy muffins? The trick to making muffins that are light in texture and rise beautifully is less is more.  What I mean by that is muffin batter requires very little mixing.  Just fold the ingredients until everything is moistened, but don’t over mix.  It took me a while to learn this!  I would beat up the batter until it was very smooth, and then end up with very tough and chewy muffins.  Not so good!

Drop the muffin batter by spoonfuls into your greased muffin tin. In a pinch you could make this apple pie muffin recipe with prepared apple pie filling, but this recipe only takes one really large apple so chopping it up takes no time at all.

This recipes come from my Grandma’s Recipe Book.  She kept all kinds of handwritten recipes, on cards, backs of envelopes, anything at all really.  See the recipe in the image above?  My Grandma wrote that.  And even though I have most of her recipes electronically, nothing will make me get rid of this special treasure!

A moist but light muffin, packed full of fresh apples and loaded with flavor!

Ingredients
  • 1/4 cup butter
  • 1/2 cup white sugar
  • 1 egg - beaten
  • 1/2 cup milk
  • 1 1/2 cup all purpose flour or whole wheat if you prefer
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup chopped apples
Instructions
  1. Directions
  2. Cream butter, sugar and egg
  3. Add Milk
  4. Mix the dry ingredients separately, then fold into the wet ingredients - but don't over stir
  5. Mix in apples
Topping
  1. sprinkle a small amount of brown sugar and cinnamon on top
  2. Bake at 375F/xxC for 20 to 25 minutes until golden -
  3. Makes 8 large muffins or 12 small ones.
  4. Yum! Yum!
