White Chocolate Cheesecake with Cranberries (Instant Pot)

A light and luscious white chocolate cheesecake  that is definitely a showstopper! It’s so easy for you to make in the Instant Pot.  No need to fuss with a Bain Marie (water bath) that regular oven recipes require.  I make all of my cheesecakes in the Instant Pot now.  In keeping with the lightness in flavour, the vanilla Oreo cookies make a perfect crust. This recipe makes a a lovely ‘tall’ cheesecake in the 7″ springform pan, and will serve about 8 people.  You can make the cheesecake a day or two before serving it as well.

And don’t you think it’s just so pretty?  A beautiful addition to your holiday baking, and what about as a homemade food gift for your host or hostess? You will need:  Instant Pot, 7″ springform pan, parchment paper, White Chocolate Almond Bark (for garnish), cream cheese, white chocolate chips, eggs, sugar, cranberries, whole berry cranberry sauce, heavy cream (35%) fresh lemon & unsalted butter. 

Recipe rating: beginner/intermediate – not too hard, but you really need to follow the instructions exactly!

When I was girl growing up, I remember my Mom always made a beautiful dessert for Christmas Dinner.  She loved to “fuss with the table” as she called it, bringing out all of her best china and silverware, Christmas napkins and sweet little ornaments.  We didn’t have Elf on the Shelf back then!  I still have some of her collectibles, I just can’t part with them.

Christmas is often bittersweet for many of us, and I’m no exception.  I remember the last Christmas holiday I got to spend with my Mom and Dad and I would give anything to get that time back.  But today I’m blessed to be able to celebrate the joy of the season with my stepfamily, my husband Mark’s amazing children, and now a beautiful grandchild.  I’m not as close with my step-children from my first marriage, and it makes me sad sometimes, but I understand that they have their own lives to live.

I’m sharing these things because I expect that everyone has their own memories or experiences that revolve around the ‘festive season’.  And I guess my message is that don’t beat yourself up if you can’t put a Hallmark Christmas together.  In my experience, and remember I’m a Grandma now, it’s the time spent together, more than the presents or perfect dinner tables.

Last month I made a recipe using cranberries – Cranberry Cherry Tarts with Almond Glaze and it was a hit!  So I realized that I wanted to make another recipe using cranberries!  I wanted a real showstopper recipe for my Christmas desserts feature.  This White Chocolate Cranberry Cheesecake would be perfect to take to our daughter’s for Christmas Eve.  Our son-in-law absolutely loves cheesecake.  I got the idea for this recipe from a copycat recipe for the Old Cheesecake Factory – the one that is white chocolate and raspberries?  So I thought, what about white chocolate and cranberries?

Now my Instant Pot Mint Chocolate Cheesecake recipe is just so good, easy to make and the creamiest ever!  I adapted that basic recipe, added in some deliciousness, like melted white chocolate, whole berry cranberry sauce, and sugared lots and lots of cranberries.

I didn’t want a regular graham cracker base, gingersnap or chocolate cookie crumbles.  Have you tried Golden Oreos?  Now that is just so much goodness packed into one little sandwich cookie.  The vanilla flavours blend perfectly with the white chocolate and cranberries in the cheesecake too.

Isn’t it beautiful?  Well, let me tell you, it tastes beautiful too.  I brought this one to work, for my last team meeting of the year, and everyone just loved it!  Not a scrap was left.

  1. Sugar the cranberries the day before you are going to bake.  They take about two hours in total to set up, and will keep in the fridge for about a week.
  2. Follow the instructions carefully.
  3. Have all of your ingredients, especially the eggs and cream, at room temperature.
  4. The cooking time, and cooling times are just right.
  5. Garnish the cake with white chocolate ganache, sugared cranberries and white chocolate almond bark

The white chocolate ganache is so easy for you to make and it looks beautiful dripping down the sides don’t you think?  You can add the white chocolate almond bark to the top for garnish that takes this White Chocolate Cheesecake to a whole new level. This White Chocolate Cheesecake is so creamy, and the sugared cranberries are divine!  Make it in your Instant Pot and you will never bake a cheesecake in a regular oven again.

  • 3/4 cup Oreo Cookies Golden (vanilla), crushed
  • 2 1/2 tbsp butter melted
  • 1 1/2 tsp sugar
  • 3 pkgs Cream Cheese pkgs 8oz
  • 3/4 cup sugar
  • 1 1/2 tsp lemon zest
  • 3 eggs at room temperature
  • 1 egg yolk at room temperature
  • 3/8 cup whipping cream 35% fat
  • 1/2 cup white chocolate chips melted, slightly cooled
  • 4 tbsp cranberry sauce whole berry
White Chocolate Ganache
  • 1/2 cup cream Heavy, 35% fat or more
  • 3/4 cup white chocolate chips
    1. Crush the Vanilla Oreo Cookies in a food processor until crushed, add melted butter and sugar blend well
    2. Press into your 7" spring form pan, that has been well greased and lined with parchment paper on the bottom.
    3. Press up the sides just a bit
    4. Put in the refrigerator to chill while you make the filling.
    1. Using your mixer, blend the cream cheese, sugar, and lemon zest until creamy.
    2. Add the eggs and egg yolk, one at a time, blending lightly.
    3. Add the cream, and blend this by hand, just until it disappears
    4. Pour half of the cream cheese filling onto the crust
    5. Drop 2 tbsp cranberry sauce over the top. Pull a stick or skewer lightly through the top to create a marbled effect.
    6. Pour the remainder of the cream cheese filling on top and do the same with the rest of cranberry sauce.
    7. Getting the Instant Pot Ready
    8. Pour one cup of water into the bottom of the pot
    9. Place the trivet in the bottom of the pot
    10. Put the cheesecake on top of the trivet inside the pot
    11. lay a piece of paper towel on top and lightly put a piece of aluminum foil on top of that
    12. Close the pot and make sure the vent is set to 'seal'
    13. Set the timer for Pressure cooking High for 40 minutes with a Natural Release of 15 minutes
    14. Remove the cheesecake from the pot and let it sit on the trivet for one hour, keeping it covered
    15. Refrigerate overnight before garnishing
    White Chocolate Ganache
    1. Put the chocolate chips in a small bowl

    2. Put the cream in a medium saucepan, and cook over medium heat until its foamy but not sticking to the pot

    3. Pour the hot cream over the chocolate chips, wait about 20 seconds and then stir until the chocolate is glossy.  The ganache is ready to use when it reaches 35 degrees F.

    1. Spoon the Ganache around the edge of the cheesecake so that it drips down the sides.  Spread the ganache over the top of the cake and let it set. 

    2. Decorate with Sugar Frosted Cranberries
    3. Enjoy!

    21 Ways Hygge Makes Winter Cozy

    How to survive winter? Well, if you live where winter brings darkness and cold harsh weather, you probably just want to crawl into bed and pull the covers over your head for the next four months. Am I right? What if I were to tell you it doesn’t have to be that way.

    That in some countries, winter is embraced and celebrated, with candles, coziness, firelight, and friendship.  Where people just come together and share a meal, or settle indoors with a big chunky blanket, a cup of tea and a really good book.  Sounds great right?  Well it’s real.

    There really is a way for all of us to survive winter with joy, mindfulness and creativity.  The concept is Hygge, a way to bring coziness and happiness into your life every day.  I’ve got a list of 21 ways to feel happy in winter – from big cozy sweater, and hot buttered drinks by the fire, to a family game day.  What about Random Acts of Kindness?  Or visiting shut-ins during the holidays.  We’ll show you many creative ways, for little or no cost, to find joy and embrace the challenges that winter brings.  Sound like fun?  I thought you would like this.

    Once we get past Thanksgiving (October in Canada and late November in the United States) well, the days are definitely shorter.  I get up in the dark and come home in the dark.  Ugh.  At this time of year people fall into two categories: The “I hate winter” group or the “How to survive winter” category!

    Even our dogs get confused.  Now I’m not sure a mini schnauzer and a wheaten terrier understand the benefits of Hygge and Coziness, but I’m pretty sure they’ve picked up on the fact that I’m really ok with winter these days, and actually enjoy the cold, the exercise, and the coziness with my chunky knit blanket, beautiful fat white candles, a great book, and quiet time for snoozing.

    For many, the idea of Hygge makes them feel cozy.  What do I mean by that?  Well I think many of us are searching.  Searching for a peaceful and cozy life.  But to do that we need to let go of some things, in my opinion.  Things like perfection, keeping up with the neighbours, and our obsession with technology.  We need more conversations, more quiet moments, mindfulness and reflection.  I think I’ve been searching for a Hygge Life for a very long time.  I’m getting there, but we still have so many distractions right?

    If you are enjoying this post, we’ve written extensively about Hygge.  While typically enjoyed during the winter, the Danish, you can live Hygge all year long.  You can Live Hygge in Spring and summer hygge has so many possibilities!

    Hygge falls into so many categories too, like self-care, personal development, mindfulness, simplicity, home decor, and my favourite – happiness.  Yep, plain old happiness.  What could be better?


    What is Hygge living?

    Hygge living does not require you to buy anything, change your lifestyle or diet.  Hygge life is all feelings.  Like those feelings you get when visiting a dear friend you haven’t seen in a long time.  That feeling you get when remembering a happy childhood memory.  It’s listening to your child share their excitement about snow, tobogganing or Christmas.

    What is Danish Hygge?

    Hygge is often stated as the “Danish art of happiness” and The Little Book of Hygge describes the concept in detail. The Danes believe that Hygge is about togetherness, comfort and the experience itself, of being together or enjoying comfort and coziness on your own.

    How can I survive winter?

    Surviving winter is no joke.  And we’re not talking about winter camping here – but then again that might be kind of fun!  And there are fun ways to winter camp!  I would suggest that getting through winter, surviving the short days, cold weather, and general annoyances that go with the season, is about adjusting your mindset.  Using Hygge in winter opens up many opportunities to embrace the challenges that winter will throw at you.  We’ve listed twenty-one, but before we get to that, go light some lovely candles, set up some soft music, make a cup of tea and relax.  We’re going to help you plan your Hygge Winter activities.


    Is Denmark dark in the winter?

    Danish winters are cold and dark, with days that appear to be much shorter than we have in North America.  Sunrise is typically around 9 a.m. with sunset at 4 p.m.  Even on our shortest day of the year, the Winter Solstice on December 21st, in Canada and the Northern United States, a typical sunrise starts at 7:30 and the day darkens by 4:30 ish.

    Which is why Hygge is comforting, and helps the Danes deal not only with the cold and darkness, but often the depression that people can suffer as a result.

    So, how to get through winter?  Here is our list of ways that we think are cozy, fun, and definitely cheerful!  We’ve even got a free printable Hygge Planner for you to download so that you incorporate some of these events into your life over the next few months!

    Cozy up your home – Fat white candles, chunky knitted throws, essential oils, soft pillows, it’s all about creating coziness for you and your family.

    Random acts of kindness – During the holidays there are so many that are not as fortunate as you and I are.  Our daughter actually gathers friends and for one night, travels around the city, giving out small gift cards, fresh flowers, and tiny boxes of chocolates.  You can make this whatever you want, maybe even create an annual event.

    Visits to shut ins – Winter means ice and snow, and our elders who may be in assisted living aren’t able to get out and walk.  Their families also may live far away.  If you have a bit of time every week, even 30 minutes, a visit to your neighborhood retirement home will be gratefully received.

    Get outdoors –  One of the biggest challenges that winter presents is the lack of sunlight, and many people suffer from seasonal affective disorder or SAD?  Just a few minutes of daylight per day will chase the winter blues away.  Get up from your desk and go for a walk at lunchtime.  It really makes a difference!

    Weekend retreats – This could be something as simple as visiting your folks for the weekend, and that will cheer them up too!  Or if you are able to check in to a country inn, or hotel in the next town, maybe where there is a winter festival happening.  I found that there are tons of coupons available on these types of weekend getaways too.

    Family game day – This is one of our favourites!  Put down the smart phones and mobile devices and get out the board games, card decks and checker boards!  Having a tournament with small prizes adds extra fun and excitement.

    Family dinners – Sundays were traditionally the day for family dinner, but we are all just so busy these days.  Call up your family and/or friends and talk about a theme – maybe a vegan dinner, or all appetizers?  You can personalize this any way you like and send out fun invitations.

    Host a potluck – No time to cook?  No problem?  Create an easy menu that family and friends can contribute to, pick a date, clean up the house and be the hostess or host with the most!  This is a great idea, especially after you’ve just decorated the house for the holidays, or there has been a really long spell of bad weather.  Everyone has cabin fever!  What about a Caribbean theme?

    Try a new drink (cocktails by the fire) – After a day of tobogganing or skating at city hall, be sure to have all the fixing for that new drink you just read about online. Oh, and we don’t let a little detail like not having a fireplace stop us from enjoying a fire.  You can ‘stream’ a crackling fire on YouTube or from your local cable company any ole time!

    New recipes – When they’re forecasting snow all weekend long?  No problem.  Pull out your slow cooker or pressure cooker and try out some new recipes!  We’ve got lots for you to choose from.  Being forced to stay indoors by the weather, just means you have lots of time to experiment and have a yummy experience as a result!

    Cozy clothes – The concept of Hygge is all about cozy, and that means big bulky sweaters, fun leggings, and my favourite – reading socks!

    Hygge Home Decor – When we think about creating a cozy home it’s about big soft pillows, fat white candles, blankets, aromatherapy, soft lighting.  Make your bedroom a Hygge Retreat by including some of these delightful items.

    Knitted afghans – You know those afghan blankets that people knit with their arms?  I think they are amazing, and look so soft and cozy, I might not want to leave that blanket for a whole day.  🙂

    Learn to knit or crochet a scarf – So to follow my thoughts about those chunky arm knitted blankets, why not learn to make one yourself?  I can’t think of anything easier, and there are tons of ‘how to’ videos on YouTube and the web.

    Make a hygge playlist – Create your own, or you can actually choose a Hygge playlist with Nordic music on Apple or Spotify!  Relaxed gentle music, soft jazz, depending on your mood.  Or something bright and sparkly!

    Cozy movie list – Ask your friends for recommendations, but chances are Netflix or Crave have you covered.  Like the Hallmark Christmas movies that play this time of year, there really is a tremendous choice out there.  We love cooking shows, dramas, and stories about overcoming adversity – you know when the underdog character wins the day?  Now that’s uplifting.

    Hot drinks – Cocktails might not be your thing, but that’s no problem! Hot mulled wine, Spiced Apple Cider, Exquisite Teas – maybe Chai? All add to a cozy – I’m not going outside today – atmosphere.

    Candles, mood lighting, fairy lights –Creating your own cozy atmosphere is very important, and applies to your personal space, hosting a potluck, or when you invite some friends over just because.  We love fairy lights, and use them all year round – you know those mini lights you put on your Christmas Tree?  Grab a bunch at your local dollar store and get festive! We’ve also got a neat article about creating your own special place with a  DIY fairy light project.

    Unplug from technology – You really have to do this.  I really have to do this.  We are all so connected to our mobile devices and it’s epidemic.  How do we experience intimacy, coziness and happiness while scrolling?  Try to put your phone away for a certain period of time during the day.  Say 30 minutes to start.  Put it in a spot where you have to get up off your chair in order to use it.  Or even better, in another room.

    Staycation – Stay at home vacations can be so much fun!  It gives you the opportunity to get out and experience your community, local festivals, and just enjoy the warmth and coziness of your own home!  Appreciate the fact that there is a storm raging outside, and you are inside, in your lovely home, snug as a bug.

    Practice mindfulness – what does this mean? As much as possible stay in the moment.  Listen to what your friend is telling you and look into their eyes while they are talking.  Stop the hamster wheel in your head that is going over the huge list of things to do.  Appreciate how the snow feels on your face, the warmth of a winter sun, the smell of your grandchild while they sleep in your arms.  How does the book you are reading make you feel?  Try journaling to capture those special moments throughout your week.  Have you tried Morning Pages?

    Easy Rugelach Recipe | How to Make Delicious Rugelach Cookies

    This easy rugelach recipe is one that you will definitely want to add to your collection of holiday desserts.  We’ve included step by step instructions below, you just can’t miss.  You might want to get your family involved too, since making the cookies is definitely a labor of love.  Just be sure to include about 2 hours of time for chilling the sweet pastry dough into your schedule.  I love to make them in early December because this is a cookie that freezes beautifully.  Even if you don’t celebrate Hanukkah, they are just too pretty not to bake!

    You will need: apricot preserves, walnuts, cinnamon, butter, all purpose flour, salt, cinnamon, cocoa, cream cheese, vanilla extract, sugar and powdered sugar.

    So here we are on the last night of Hannukah and in a few days celebrate Christmas.  We celebrate both holidays in our family and I feel so blessed to be able to do so.  Some years the calendar determines that Hanukkah falls right in the middle of Christmas and that’s just fine with us!

    Raspberry Dream Bars are another classic Holiday Desserts recipe, and we have a great recipe for you to try!

    However even though Mark and I have been married 9 years (where does the time go?) this is the first year I’ve made Rugelach to have at Hanukkah.

    Had I known they were so easy to make, and had this easy rugelach recipe to use, they would have made a regular appearance!

    And while these sweet morsels of goodness are typically served to celebrate during the eight days of Hanukkah, I plan to bake a batch for Christmas, since I think they are the perfect Winter Cookie, and go really well with a big mug of hot chocolate.  Know what I mean? 🙂

    There are lots of different rugelach fillings.  I chose a traditional filling of apricot jam, walnuts, cinnamon and cocoa.  For my next batch I’m going to use mini chocolate chips!  The possibilities include just about any type of preserves or jam that you love, plus cinnamon and of course chocolate.  Yum! Yum!



    • Can Rugelach be frozen after baking? You sure can!  There are two ways to freeze Rugelach.  You can freeze the discs of pastry dough before you make it into cookies, or you can freeze the baked cookie (much easier I think!) Both for about three months.

    Sweet juicy cherries and tangy cranberries are a perfect combination for a holiday dessert – Thanksgiving or Christmas!  Just look at these little Cranberry Cherry Tarts topped with an Almond Glaze.  Just like a cranberry mini pie right?  That delicious buttery pie crust creates a melt in your mouth tart, just the right size after an enormous holiday meal.  Not too sweet, not too tart, and just the perfect little morsel.  We think the almond glaze takes these cranberry pies to a whole different level, don’t you?  And I’ll show you my no fail pie crust recipe, really making these mini pies is just so easy.  And you will wow your holiday guests with these exquisite little desserts.

    You will need:  butter, flour, tart tin, cranberry cherry pie filling, icing sugar, milk, sliced almonds, almond extract, light corn syrup.

    Now you’re probably thinking that cranberry and cherry will be too tart, and you really don’t have time to fool around with pie crust.  Just trust me ok.  You’ve got this!  My Cherry Pie recipe gets rave reviews, and those are from beginner bakers too!  Of course, I just love the rich ruby red of the filling when combining these two fruits. And that almond glaze is just amazing.  You could almost call this a cranberry almond tart recipe.

    Now in my Cherry Pie recipe, I show you how to make the filling from scratch.  But it’s the holidays right?  I wanted to create a recipe that would help you out by saving some precious time, but still deliver a Rockstar dessert.

    We just couldn’t wait to dig in to these amazing cranberry tarts!


    The idea for cranberry tarts came about by accident.  I was looking through my Grandma’s old recipe book, and this clipping from an old magazine, dated 1954 fell out.  Really!  And there they were, these adorable cranberry tarts.  Now the picture shows a lattice pie crust top, but I was looking for something a little more sophisticated but wouldn’t take much effort.   I found just the recipe at The Food Charlatan!  She has amazing recipes, so be sure to check them out!  The beauty of the glaze is that you put it on the top of the mini pies after they are baked and cooled.

    I love to make special desserts for the family around the holidays, don’t you?  We have four adult children, and a little granddaughter, and everyone has their favorite recipe.  My son-in-law loves cheesecake.  Our youngest son goes for those big chocolate chip skillet cookies.  Everyone has their special favourite and it fills my heart to create special treats for them.  I’m sure you are just the same.  A labour of love to be sure.

    We filled the tarts 2/3 full so that the filling wouldn’t bubble out too much when baking! Just look at that fat cherry!

    Now here’s the pie crust video.  I have several, but I think this is the best one for these tarts.

    We toasted the almonds slightly to add a nutty almond flavour to the glaze on these awesome cranberry tarts.




    1. Use a good quality pie filling. Some of the cheaper, no name brands have lots of filling, but very little fruit in my experience.
    2. Make your pie crust the day before. You can follow the video I’ve provided and let your pie crust rest in the refrigerator until you are ready to roll it out.
    3. Grease your tart tin well with butter. I use a muffin tin for my tarts.
    4. Fill the tarts no more than 2/3 full. Any more and the filling will bubble up and run all over.
    5. TIP: Place an aluminum foil tray or just a large piece of foil in the bottom of your oven to catch any drips.
    6. Follow the instructions carefully.
    7. Let the mini pies cool completely before storing in an air tight container until you are ready to serve.
    8. Apply the glaze to the mini pies at least two hours before you are ready to serve. Or you can apply it after they cool, and store them in the refrigerator until you are ready.

    This muffin tin is the exact one I use to make this cranberry tart recipe. It’s reasonably priced, and has really good ratings.  I’ve always try to use Wilton bakeware whenever I can.

    • 2 cups flour all purpose
    • 1 cup butter unsalted, cold
    • 1/2 cup water ice cold
    • 2 cans cherry pie filling cranberry cherry
    • 1/2 cup powdered sugar
    • 2 tsp milk maybe 3
    • 1 tbsp corn syrup light
    • 1/4 tsp almond extract
    • 1/4 cup almonds sliced
    Pie Crust
    1. Put the flour into your food processor

    2. Cut the cold butter into small chunks and add it through the chute of the food processor a bit at a time.  

    3. Pulse and slow add the cold water through the chute.  Pulse until fully blended

    4. Shape the dough into a an oval, cut in half and then wrap each piece in plastic wrap and store in the refrigerator until you are ready to roll out the pie crust

    Making the Tarts
    1. Roll out your pie crust on a silicone pie mat or baking sheet

    2. Grease your tart tin, and using a pastry cutter, cut circles that will fit the tin and provide for a small overlap on the top.  You will need 12.  

    3. Fill each tart with cranberry cherry pie filling, about 2/3 full.

    4. Cut 12 additional circles that are smaller in circumference to fit on the top of the pie filling in the tarts.  Place in the center but don't seal them.  We need the steam from the pie filling to be able to escape.   

    5. Brush the pie crust tart tops with an egg wash (one egg yolk in a cup with 2 tbsp of water)

    6. Bake at 425F for 15 to 20 minutes.  Don't leave your tarts to bake, stay close by and make sure they don't run over.  

    7. Let the tarts cool for at least two hours before adding the glaze or refrigerate in an air tight container until you are ready to serve them.

    Almond Glaze
    1. Whisk the glaze ingredients together.  

    2. Carefully drizzle the glaze over each tart, being careful not to overfill. Try a teaspoon at a time.

    3. Sprinkle each tart with sliced almonds

    4. Let set for about two hours, place in an air tight container and refrigerate until ready to serve.

    So this past week I decided to try to make this awesome tourtiere recipe in my Instant Pot pressure cooker!  And you won’t believe not only how easy it is, but how delicious and moist the result was!  I also used a frozen ready made pie crust, because I was entering a contest by Tenderflake.   I didn’t win a prize, but I think we’re the winners with this amazing recipe!

    So this post has been added to.  You can make tourtiere with the classic recipe or use the alternate instructions to make the filling in the instant pot.

    Our Tourtiere is all dressed up with a maple leaf pie crust topping!


    Well traditionally a French-Canadian dish, an authentic tourtiere recipe is often served during the Holidays, like Thanksgiving, Christmas, or New Years, but I like to have a few of these hearty meat pies in the freezer for those days you just don’t have time to cook.



    Now I know the main focus of this blog is easy family recipes, but I also have a passion for golden, flaky pie crust.  And this traditional tourtiere recipe really delivers!

    In my family, Christmas Eve was a time that we got together before the big day!  We would go to Church, for a candlelight carol service and then come home and open up one present.  Usually that present was PJ’s or a book, and we would head off to bed early in anticipation of what Santa would leave us under the tree!

    As an adult, that story changed slightly, to include delicious eats that we could enjoy after church!   This recipe was perfect, because I could make it ahead of time and freeze it, taking it out earlier that day and wrapping it up so that it would travel safely to my Mom and Dad’s.  I would put it in the oven on a low setting while we went to church, and coming home to those delicious aromas in her kitchen, well, those are things you never forget.

    And while this amazing traditional tourtiere wasn’t served every year in our home, I am confident that it was enjoyed by many!  Today this recipe is one of my top 10 so I know you guys are making lots of Tourtiere!

    Have a slice of this yummy Tourtiere won’t you? It’s a meal unto itself, and all you really need to add is a side salad.

    We even have them after a long afternoon on the golf course!  This is one meat pie recipe you will want to serve anytime, not just during the Holidays.  The blending of different meats, herbs and spices in this authentic tourtiere recipe will have your mouth watering long before the pie is ready to serve.  But be patient!  The pie crust  and delicious filling in this recipe is worth the wait.

    What is in a Tourtière?  Well in addition to deliciously lean cuts of beef and pork, that are slowly simmered, I think the unique combination of Tourtiere spices that includes cinnamon, cloves, nutmeg and summer savoury, provide an earthy, rich flavour.

    Or in the case of the Instant Pot Recipe just below, you can speed up the process even more by using a prepared frozen pie crust.  Honestly?  I prefer my own pie crust.  But when pressed for time, or for no reason at all, I will use ready made pie crusts.  The quality is so much better today than it was even five years ago!


    I really didn’t change anything for the recipe ingredients at all, not even the water.  The filling still has to bake in the oven for 35 TO 45 minutes.

    • Use prepared frozen pie shells for the Instant Pot version of this recipe
    • Thaw the pie shells in the refrigerator while the tourtiere filling is cooking
    • Follow all the directions carefully
    • Don’t worry if the filling appears to have alot of liquid.  Some of it will bake away
    • Use pie crust cutters  (links below) to create a lovely design on your top crust or if using a solid top crust, be sure to cut several vent holes to let out the steam
    • Let the Tourtière stand for about 10 minutes before serving
    • Bon Appetit!

    Whether you cook the filling on the stove top or use the Instant Pot, this traditional tourtiere recipe can be made ahead in a batch and frozen, either in the large 9.5” family size, or in an individual 4” size.

    Pop the frozen Tourtière into the oven for 30-35 minutes, add a salad and presto!  A meal in minutes. Alternatively, bake the pie in a microwavable dish, and dinner can be ready quicker than that!

    Not sure what to serve with a Tourtière?  Shown here with a tart tomato antipasto – mainly because I wanted something red!   But you can use your imagination and add any type of side dish.  The Tourtiere is a meal unto itself, so I tend to choose lighter sides, like a tossed salad, or grilled root vegetables.

    A traditional French-Canadian dish, Tourtière, or meat pie is usually served around the festive season. It's such a hearty meal and easy to make in batches, so batch bake several and put them in the freezer. You can pull one out and pop it in the oven one night when you are pressed for time. Just add a salad! We have an Instant Pot Tourtiere and a Stove Top Tourtiere - take your pick!

    • 2 pie crust recipe uses lard, makes top and bottom crust
    • 2 lb. ground beef lean
    • 1 ½ lb. ground pork lean
    • 2 onions large, cooking
    • 1 cup celery chopped
    • 1 cup parsley chopped
    • 1 ½ c water filtered
    • 3 tsp summer savory dried
    • 1 tsp cinnamon ground
    • ¼ tsp nutmeg
    • Salt and pepper
    • 2/3 cup rolled oats large flake
    • 1 egg yolk large
    • 3 tsp. milk
    • 1 tsp cloves ground
    Instructions for Stove Top
    1. In a large saucepan with a heavy bottom, (at least 3 quarts/litres) cook, beef, pork, chopped onion, celery, parsley, water, and all of the spices and herbs – on medium heat, until the mixture comes to a boil and the meat is broken down and looks crumbly – this will take 15-20 minutes (the meat should not be pink).  Then let the mixture simmer on low heat until the liquid is cooked down– this will take 50 – 60 minutes TIP: keep checking to make sure your burner isn’t set to high and overcooks the mixture, you don't want the meat to dry out! 

    2. Once cooked, stir in the oats and set aside to cool.  If you didn’t have time to make your pastry you can cover the mixture and put it in the refrigerator for 2-3 days.
    3. Put half of the meat mixture into one pie shell.  Roll out the top crust and with the edges moistened (see 5 Steps to Perfect Pie Crust!) flute the two crusts together with your fingers.  Brush the crust with a mixture of the milk and egg yolk (this will give the crust a golden glow) Cut vents in the top crust to allow steam to escape.  Repeat for the second pie.

    4. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden.  Let the pie stand for 5-10 minutes before serving.  It will be piping hot!  Each pie will serve 6 to 8 people.
    5. To freeze your authentic tourtiere recipe:  double wrap in aluminum foil and then place inside a zippered freezer bag to prevent freezer burn.

    Instructions for Instant Pot
    1. Get your frozen pie shells out of the freezer and let them thaw before baking

    2. In the bottom of your instant pot, place all of the ingredients: onion and celery, beef, pork, parsley, water, and all of the spices and herbs

    3. Mix the ingredients up - make sure the meats are broken down as much as possible

    4. Put the lid on your Instant Pot and set the timer to Meat/Stew for 20 minutes on High.

    5. Do a slow release for 5-7 minutes, then a fast release for the rest of the pressure.  Remove the lid and let stand for about 10 minutes.  You want to do this because the filling will be piping hot and it makes it easier to put into the pie shell

    6. Prick the bottom of the pie shells with a fork and put half of the filling in each pie shell and spread evenly.  

    7. With the two remaining pie shells, gently remove them from the pans, and roll them out on your baking mat.

    8. Using the pie crust cutters, create fun designs to cover the tourtiere mixture. OR you put the entire crust on the top, crimp the edges using your fingers.  MAKE SURE you cut a hole in the top crust for steam to escape.  

    9. Bake in the bottom third of the oven at 400F for 35 to 45 minutes or until the crust is golden. Let the pie stand for 5-10 minutes before serving. It will be piping hot! Each pie will serve 6 to 8 people.
    10. To freeze your authentic tourtiere recipe: double wrap in aluminum foil and then place inside a zippered freezer bag to prevent freezer burn.

    This recipe makes two 9" pies.

    Tip: you can get the bottom crust ready, but leave the rolling of the top crust until you have your filling prepared. Prep time includes the chilling of the pastry dough.

    I love using my slow cooker – soups, stews, pulled pork, potatoes, chili, roast beef, chicken….. well I’m sure you do too.  Why?  Because it saves me TIME.  What’s the one thing that people say on a Monday morning when you ask “how was your weekend?”  Always, always – “it was too short!” So in addition to finding ways to make delicious pies and pastry – I’m searching for easy and quick recipes for you to make delicious desserts.

    S’mores Crockpot Chocolate Lava Cake all set for two!

    On long weekends I often make an amazing BBQ Pulled Pork.  So following on that success, I’ve been researching recipes and wondering what other wonderful things I could use my crock pot for?  I got my answer earlier this week from hubby Mark, who advised me that when he returned home to our RV last Monday the propane tanks were empty.  Apparently all of the baking I’ve been doing in our little oven in the RV takes a ton of gas!  Who knew?

    We’ve since fixed that problem with a bigger tank, but I know lots of folks who RV full time, and even those that don’t RV at all that love to use their slow cooker for making delicious desserts.  One of my favorite cookbooks is the Fix It and Forget It! and that’s where I found the basis for this recipe and modified it to make it easier!

    Using a Crock Pot to make squares or bake a pudding or cake, it’s just not a connection I make when thinking about creating a dessert.

    But after making this amazing S’mores Chocolate Lava Cake, my crock pot has moved to the top of my list for baking delicious Sweet Treats.


    • Grease the slow cooker and line it with heavy aluminum foil, leaving an overlap around the edge – so that you have something to grip to pull it out of the slow cooker
    • Bake your Chocolate Lava Cake on low.
    • To prevent too much moisture from getting on top of the cake, put a layer of paper towel just under the lid
    • Follow all of the directions exactly
    • Leave the lid in place for the required time. No peeking!
    • Turn off the slow cooker and let the cake cool for a few minutes, before serving with your favorite toppings.  Don’t worry the chocolate inside will be hot!

    • 1 pkg chocolate cake mix 18.5 oz
    • 1 package instant chocolate pudding mix 3.9 oz
    • 3 eggs
    • 1 cup water
    • 3/4 cup oil
    • 1 cup semisweet chocolate chips
    • 1 pkg mini marshmallows
    • 1 tbsp Kahlua
    • 3/4 cup graham cracker crumbs
    • 2 cup unsweetened almond milk
    1. Mix Cake mix according to instructions, and pour into the greased insert of your slow cooker.

    2. Top with mini marshmallows - I use half of a package to cover the top of the cake batter.

    3. In a separate bowl, mix the instant pudding with 2 cups of cold milk.  We used Unsweetened Almond Milk.  Follow the package instructions.  

    4. Pour the pudding mixture over the mini marshmallows.  Then add the chocolate chips and sprinkle with graham cracker crumbs over the top. 

    5. Cover and cook on Low 2.5 hours.  This time is exactly right, and I've had several failures!  

    6. Serve with Whipped Cream or your favorite Ice Cream!
