The last time I brought a freshly baked apple pie to work, it disappeared in seconds. Well it seemed like seconds.
And a colleague who sits beside me asked if I’d ever made an Apple Pie Lasagna?
So that was the catalyst to research and find the best recipe I could for you! And of course the easiest as well.
I found this recipe in some old cookbooks I have at home, but you know it was all about making apple pie filling from scratch.
Now you know I love to bake from scratch, as often as I can. But this recipe, this No Bake Apple Pie Lasagna, would just be perfect for almost anything! Potlucks, BBQs, a family dinner. A great dessert to take to your child’s bake sale!
We’re going to have ours this weekend, when we visit The Famous Louisa. It’s been almost a month and Mark and I missing some quality face time with our special munchkin.
I think that whoever invented Dessert Lasagna recipes should get a special award don’t you? Like the Nobel Peace Prize or something equally prestigious, the Order of Canada maybe? 🙂

This recipe is no bake, and when you see just how easy it is, you will run to the store to buy the ingredients.
So here is what you need:
For the pie filling:
- Apple Pie Filling – 3 cans
- 2 tbsp maple syrup
For the cream cheese filling:
- 8 oz Cream cheese, softened 2
- 1 C Powdered sugar
- 2 tbsp Brown sugar
- 1 tsp Cinnamon
- ½ C Heavy Cream
- ½ tsp Pure vanilla extract
- 2 tbsp Caramel Sauce
- 8 oz Cool Whip
For the lasagna:
- 3 pkg Graham Crackers
- 8 oz Cool Whip
- 1 C crushed Heath Chocolate Bars (Skor in Canada)
TIPS FOR A PERFECT NO BAKE APPLE PIE LASAGNA
- Beat cream cheese on medium-high speed with a wire whisk attachment until light and fluffy, and then turn off your mixer to add the dry ingredients: powdered sugar, brown sugar, cinnamon. Beat the dry ingredients into cream cheese, using your mixer on low.
- Buy your Heath (Skor) Bars at the bulk food store. It’s cheaper and then you can chop them up with a food processor – just until you get bite sized chunks.
- Add heavy cream and vanilla extract. Beat on medium-high speed until whipping cream is fully mixed into cream cheese. Add caramel sauce last and mix into the batter batter.
- Add cool whip and beat on medium speed until mixture is well combined. Divide into thirds.
- Follow all of the directions carefully.
- Cover the bottom of your pan with graham crackers, in a double layer. You can break the crackers into pieces in order to get into the nooks and crannies.
- Cover graham crackers with a layer of the cream cheese batter and spread evenly. Spoon apple pie filling over cream cheese. Add a small handful of toffee chips on top and cover with a thin layer of cool whip. Repeat this twice so that you end up with three layers. Cover the top layer of Cool Whip with additional toffee bites and drizzle with caramel.
- Allow at least two hours in the fridge so that the graham crackers soften.
- Store in an airtight container and keep refrigerated.

Well I recently had such a craving for pie, and blueberry pie in particular. Now I could have picked up a ready made pie from the local bakery, but that wasn’t going to cut it either. I needed a homemade blueberry pie!

I knew I had some leftover frozen blueberries, but didn’t have quite enough for my recipe. So when you don’t have enough blueberries, what do you do?
You improvise and add other berries to make a mixed berry pie or what’s known as a razzleberry pie! So what is razzleberry pie?
Now the experts will tell you that a true razzleberry pie or triple berry pie has blueberries, raspberries and blackberries in it. There are lots of recipes out there for mixed berry pie.
The Pioneer Woman has an amazing mixed berry pie. There is even a famous razzleberry pie – Marie Callender’s Razzleberry Pie. I’m sure it’s very good, but you and I like to bake from scratch, don’t we?
And we are on a quest for the perfect razzleberry pie recipe!
Now I’m not that fond of blackberries, so my version of razzleberry pie doesn’t include them. But just in case you do, I’ve included blackberries as an option in the recipe below.
To be honest I didn’t even know there was such a thing as a razzleberry pie recipe! I was shocked at all the recipes I found!
I remember a dear friend of the family, June always calling her raspberry pies, “razzleberry”. She is such a sweet person, and loves to bake. So when I was putting this recipe together I immediately thought of her and her razzleberry pies.
And I really wanted to bake a pie using my new secret weapon.

My homemade razzleberry pie recipe, is based on the Classic Blueberry Pie Recipe from one of my favorite cookbooks – A year of pies! By Ashley English.
This cookbook is so delightful and covers everything from making the pie crust to delicious pie recipes by season.
I used my favorite pie crust recipe – which is a combination of butter and shortening. I always use this recipe because it makes enough for two – 2 crust pies. That means I can freeze the balls of pastry dough that I don’t need and it’s such a time saver.

Don’t you just love the lattice pie crust? And I’ll show you how to get that delicious golden glow too.
This razzleberry or triple berry pie packs a sweet punch in that deep purple goodness! And the recipe is so easy, no pre-cooking the filling!
Just mix up the berries, sugar, lemon juice, and a bit of corn starch.
So here’s what you need:
- Blueberries (frozen)
- Raspberries (frozen)
- Blackberries (frozen, optional)
- Lemon juice
- Lemon zest
- Corn starch
Now for perfect flaky pie crust you will need these ingredients:
- 1 cup butter
- 1 cup shortening
- 6 cups flour
- 1 tsp baking powder
- 1 tsp salt
- 1 egg
- 1 tbsp white vinegar
- ¼ cup ice cold water

TIPS FOR PERFECT RAZZLEBERRY PIE WITH A BUTTERY, FLAKY PIE CRUST
- Mixing corn starch into the razzleberry pie filling keeps the pie from becoming a soggy mess
- Use Fresh or Frozen berries
- Follow all of the directions carefully
- You might want to use a pie crust shield to protect the edges of your pie crust from getting too dark and dried out
- Chill the pie crust with the pie filling in it in the fridge for about 30 minutes before baking. THIS IS IMPORTANT!
- Bake your pie in the bottom third of your oven
- As with most fruit pies, we want to get the oven really hot for the first 15 minutes – so set it at 425F and then turn it back to 375F for 50 minutes or until your crust is golden

Combine the blueberries, sugar and cornstarch, lemon zest, lemon juice, cinnamon, nutmeg, and sea salt in a large bowl and mix well.
Lightly press down on the blueberries to release their juices. Cover the bowl with a tea towel and let sit for 15 minutes.
Preheat the oven to 375F
Pour the filling into the bottom crust and spread evenly, and dot the pie with the diced butter.
Roll out the remaining pastry dough for the top. We're going to make a lattice top and you can do that with a pastry cutter.
Weave the strips back and forth, just like the video. When finished turn the ends under and flute the pie crust edges.
Brush it with the egg wash and return to the refrigerator for 20 minutes.
Put your pie on a cookie sheet that you have lined with parchment paper or foil. This will catch the juices.
Bake in the bottom third of your oven for 55 to 60 minutes

Homemade Kahlua Pumpkin Pie Recipe!
This homemade Kahlua pumpkin pie recipe is the best pumpkin pie I’ve ever made! The combination of pumpkin pie spices and the chocolate coffee flavors of Kahlua can’t be topped! And of course that mountain of whipping cream just adds to the experience don’t you think?

Now I love to homemade pie crust, that’s what pieladybakes.com is all about right? It’s a crazy busy time at work right now, and combining that with the holidays and baking, well I thought I would explore what is out there when it comes to frozen pie crusts and products. For this pie I decided to try one of the popular cookie pie crusts that everyone is using right now.
Baking the Pie Crust:
I just love the flavour of gingerbread, so for this recipe we’re making a gingerbread cookie pie crust! One box of 24 cookies, crushed in your food processor, with a little butter and sugar and presto! You have one delicious pie crust. We bake it for about 15 minutes before baking the whole pie.
Making the Filling:
With the pie crust out of the way, putting the filling together takes about 15 minutes when you have all of your ingredients out on the counter. I like to get everything out and measured too, as I find this method of baking really saves time. I’m all about organizing my baker’s pantry and saving time in the kitchen, are you?
The first ingredient of the recipe is Kahlua – how cool is that?
Make Your Own Pumpkin Pie Spice:
Now I rarely have pumpkin pie spice in my pantry. Honestly I just never think to buy it. So here’s a trick so that you will always have your own homemade pumpkin pie spice on hand! Pumpkin Pie Spice includes cinnamon, ginger, nutmeg and cloves. So the ratio is always
- 1 part cinnamon
- 1/4 part ginger
- 1/4 part nutmeg
- 1/8 part cloves
Mix it up in a cute little jar like the one shown here (I usually pick these up at the dollar store or big box kitchen store). And there you go!
Putting it together:
As soon as the filling is cooked, pour it slowly into the baked pie shell and then bake in your oven as per the recipe below.
Once your pie has baked and cooled, it’s time to go crazy with whipping cream! Such a beautiful and perfect pie.
KAHLUA PUMPKIN PIE RECIPE
I have made many different types of pumpkin pie recipes,
but this homemade Kahlua Pumpkin Pie Recipe is the ultimate blending of spices and exotic flavors. Sweet and spicy, with just a hint of coffee flavour, your family will love it! This pie is delicious change from the classic pumpkin pie (and which I love too!) that we usually eat during Thanksgiving. But my money says you will be asked to serve this gorgeous Kahlua Pumpkin Pie any ole time at all. Know what I mean?

I used Dare Simple Pleasures Spice Snaps

Crush the gingerbread cookies into crumbs, mix with melted butter and sugar and press into a deep dish pie plate (10")
Combine Milk, kahlua, sugar, corn syrup, spice and salt
Add pumpkin and eggs and set aside
Bake the pie crust for 15 minutes until lightly browned.
Remove from oven and slowly pour in the pie filling.
Return the whole pie to the oven and bake 35 to 40 minutes
Remove from oven and once cooled, refrigerate until ready to serve.
KAHLUA cream topping:
Beat 1 cup whipping cream with 2 tsp kahlua until stiff, spread over the cooled pie (or pipe?) and drizzle and 1 tsp kahlua on top.

My love affair with perfect pie recipes has been a life long pursuit. My parents loved to camp so we on our travels we made many a pit stop at the local diner. And you know what you always find at Diners? That’s right. The most beautiful pies on earth. Seriously. I would absolutely salivate when I looked in the dessert showcase at all of those pies. As a kid, Blueberry Pie was my number one go to pie. No ice cream or whipped cream for me though. Just pie.

Chocolate Raspberry Tart on a Sugar Cookie Crust!
I love to bake. I mean all of those yummy ingredients that come together in something decadent and delicious, well who wouldn’t?
What I love more about baking is how it lets my creative side come out. You know, that whole left brain/right brain thing?
I’ve been carrying this recipe for a Chocolate Raspberry Tart around for ages. I clipped it somewhere and it was an ad for Sealtest Dairy products here in Canada. The recipe called for a regular pie crust as a base in the tart pan. But you know me….don’tcha!
I love using different pie crusts for classic recipes.
My Vanilla Berry Tart is made on a sugar cookie crust. I made it last winter when we had just heard we were having a new grandchild, and now it’s December and our Lulu is here!
Making this delicious tart requires a little bit of planning, as you make it in two steps. First the sugar cookie crust, and then the filling.
I also used a tart pan. You can use a pie plate too – I just prefer the look of the tart and the ease of getting it out of the pan. However I made this delicious tart for Christmas Eve and I barely had it out of the pan before it was eaten all up!
Now I’ve included a recipe for the sugar cookie crust and it’s really easy, I found it online at Baking Bites. If you want something even easier – you can buy sugar cookie pie crust mixes. Just add water and stir. I used one for my Vanilla Berry Tart recipe and it was great – everyone loved it!
1 prepared sugar cookie pie crust for a 9″ pie
8 oz semi-sweet chocolate, chopped
1 cup whipping cream
1/2 cup sour cream
3 egg yolks
2 cups fresh raspberries
Prep time 15 minutes
Cooking time 30 minutes
This Chocolate Raspberry Tart recipe is so easy, this will become your go-to when asked to bring an item to a pot-luck!
Instructions for Sugar Cookie Pie Crust (Baking Bites)
1/3 cup sugar
1/2 cup butter, room temperature
1 1/4 cups all purpose flour
1/4 tsp salt
2 tbsp milk (low fat is fine)
1 tsp vanilla extract (optional)
Preheat oven to 375F.
In a large bowl, cream together sugar and butter until light. Beat in flour, salt, milk and vanilla, until mixture is moist and crumbly (it should clump together if you press it between your fingers).
Pour dough into a 9 or 10-inch tart pan and press it up the sides, making sure the layer on the bottom is even.
Bake for 15-20 minutes, until crust is set and firm at the edges. Be sure to check your oven at the 15 minute mark so that the crust doesn’t overcook. While your tart crust is cooling, carry on with the instructions below.
Chocolate Rasperry Tart Prep:
Preheat oven to 350F
Place sugar cookie pie crust in a 9″ tart pan with a removable bottom, Prick with fork
Place a sheet of parchment paper on top and fill with dried beans or pie beads to keep the pie crust from shrinking or slipping down into the pan
Bake for 15 minutes until golden
Reduce temp to 300F
Melt the chocolate and whipping cream in a double boiler or in a pot over low heat, stirring oven until smoothly blended.
Stir in sour cream
Transfer to a large bowl
Add egg yolks one at a time, beating well after each egg yolk
Fold in 1 cup of raspberries
Pour into the baked tart shell
Bake 25 to 30 minutes or until filling is set.
Remove tart from pan. Scatter remaining raspberries on top.
Garnish with fresh mint.
Classic Quiche For the Best Brunch Ever!

Serve Quiche to your friends at the next Brunch! Brunches are so popular these days, with friends meeting at a number of popular spots around town. But often eating out means reservations, and if not, waiting in long lineups to get in!
Waiting in line to wait to eat is not my idea of good time, and certainly not for my friends. So I prefer to host a brunch in our home, a wonderful way to entertain.
It’s always on the weekend, the house is usually cleaned up and it gives me a chance to really spend time with friends and family since the cleanup is a breeze and can be left until later.
I love to fuss with the table – my grandmother and mother taught me this. Real cloth napkins, fun place mats or tablecloths, fresh flowers and my best dishes!
I remember the first brunch I hosted so many years ago. I was determined to serve Eggs Benedict and had never made Hollandaise sauce in my life.
My best friend arrived a few minutes before and started to laugh as soon as she came into the kitchen. There I was, with every saucepan I owned either on the stove or in the sink, trying to follow an elaborate recipe from a French cookbook! My friend Connie saved the day, whipped up the hollandaise in one small pan, and the brunch was a huge success.
So my lesson was learned, and I turned my attention to where my talents did lie – and that was baking delicious pies and tarts. Quiche is really an egg pie with lots of yummy ingredients.
My idea of a successful menu allows for many foods to be prepared ahead and frozen – especially my famous Quiche! With that main item out of the way, I can concentrate on other items, like different types of salads, antipasto, whatever I choose.
So here is my Quiche recipe for you to enjoy.
It makes enough for six hungry guests and has been served to family and friends for many years!
1 deep dish shortcrust pastry – 9.5 or 10” pie plate
½ lb thick cut bacon
8 large eggs
1 c heavy cream
2 small cooking onions finely chopped
1 tbsp unsalted butter
1 lb Gruyere or Edam cheese – cut into small cubes ( 1 ½ to 2 c)
¼ tsp nutmeg
Salt and pepper
Optional: 1 cup of frozen spinach – thawed and well drained.
Cook the bacon and drain it on paper towel. Once cool, break into small pieces and set aside.
Sautee the onion in a separate pan with the butter until softened and the onion looks clear or transparent.
In a large bowl beat the eggs, then add the heavy cream, nutmeg and salt and pepper. Add the onion and bacon. Fold in the cheese.
Pour into the pie shell, making sure the mixture is just below the rim of the crust. The quiche will expand a bit while it is cooking and you don’t want a messy oven!
Bake at 350F for 50-60 minutes. The quiche is done when you stick a fork in the center and it comes out clean.
To freeze: wrap in two layers of heavy aluminum foil for up to a week.
Substitutes: instead of bacon, you can put in broccoli, or asparagus – be creative!
